This study investigated the effects of electron beam irradiation (0-8 kGy) on the physicochemical and protein properties of scallop adductor muscles under refrigerated storage. Irradiation significantly decreased moisture content, microbial counts, and total sulfhydryl content immediately after treatment (day 0), while increasing carbonyl content, surface hydrophobicity, and thiobarbituric acid reactive substances (TBARS) (P < 0.05).

Selectively hydrolyzed soy protein can enhance wheat-based product quality by modulating gluten thermal polymerization. This study examined the effects of β-conglycinin (7S) and glycinin hydrolysate (GH) on gluten rheological and thermal properties, particle size, Raman spectra, and microstructure during heating. A versatile fluorescent molecularly imprinted nanosensor (MIPs@O-CDs) for profiling ciprofloxacin (CIP) was innovatively developed using a controllable post-imprinting modification strategy. High-affinity molecularly imprinted polymers (MIPs) as recognition elements granted nanosensor favorable anti-interference. Environmentally friendly food packaging has emerged as a viable strategy to replace traditional plastic films. In this study, eugenol Pickering emulsion was constructed with konjac glucomannan (KGM) and tragacanth gum (GT) as stabilizers, and was introduced into the KGM/chitosan (CS) composite film by electrostatic action to develop a new type of active packaging film. This study evaluated the effect of Mogan large-leaf yellow tea (MG-LYT) on preventing obesity. It was found that cold-brewed yellow tea has stronger anti-obesity effects in high-fat diet (HFD)-induced obese mice than hot-brewed tea, due to its higher content of non-esterified catechins, as shown by metabolomic and high-performance liquid chromatography (HPLC) analysis. Notably, epigallocatechin (EGC), a key non-ester catechin, likely enhances pancreatic lipase inhibition through allosteric modulation, which explains the greater effectiveness of cold-brewed tea.
