Methods: We analyzed 3300 publications indexed in the Web of Science Core Collection (2015-2024) using CiteSpace and VOSviewer. Multidimensional evaluations of countries/regions, institutions, authors, journals, and keywords were conducted, supplemented by visual network mapping to elucidate research dynamics and collaborative patterns.

The complexity of cheese flavour components, different origin and variability in experimental data have hindered credible flavour description of Cheddar cheese at different ripening time periods. This study combined GC-MS with machine learning to explore the common characteristic ingredients of Cheddar cheese independent of origin during ripening stage at 6-12 °C. A random forest model among six classifiers performed best in assessing Cheddar cheese ripening time and 14 flavour substances (ketones, acids, and lactones) were selected as characteristic flavours by recursive feature elimination from 66 flavour substances to train the model.

In this study, the effects of high hydrostatic pressure (HHP)-mediated alterations in matrix composition on the bioaccessibility of carotenoids in satsuma mandarin juice were assessed. Results showed that the total carotenoid content increased significantly under HHP treatment (300-600 MPa), and the total carotenoids bioaccessibility was optimal at 600 MPa/1 min. The bioaccessibility of carotenoids in satsuma mandarin juice was positively correlated with the contents of titratable acids, total phenols and total sugars, all of which increased significantly after HHP.

Food combinations featuring specific functional components represent one of the effective intervention strategies for alleviating functional gastrointestinal disorders induced by dietary and environmental factors. Honey and aloe vera have both been recognized as natural agents with laxative effects, yet the synergistic effects of their combination in alleviating constipation and the underlying regulatory mechanism remain to be elucidated. While restructuring agricultural products enhances heat and mass transfer during freeze-drying, the underlying mechanisms remain poorly understood. This study employed a multiscale approach, combining freezing dynamics, sublimation drying kinetics, X-ray tomography, gas permeability assessments, thermodynamic parameters analysis, and mathematical modeling to systematically investigate the differences in transfer properties between natural and restructured peaches across the freezing and sublimation drying processes. This study systematically compared the effects of microwave (MW) and conventional thermal (CT) processing on microbial inactivation, enzyme activity, protein retention, and nutritional characteristics of bovine milk under pasteurization (70 °C for 20 s) and ultra-high temperature (UHT) sterilization conditions.
