The effects of wheat gluten hydrolysates (WGH) preculture on yeast acetic acid tolerance and fermentation performances were investigated. Results showed that WGH preculture significantly increased yeast growth and viability under acetic acid stress. Particularly, the WGH fraction precipitated with 90 % (v/v) gradient ethanol (WGH-C) preculture significantly improved yeast cell membrane integrity and H-ATPase activity, thereby decreasing the intracellular accumulation of ROS and acetic acid.

The advantages of pottery jars in the aging process of Baijiu are evident, but the impact of their material composition and pore structure on the flavor of Baijiu has not been widely studied. This study systematically analyzed the effects of six types of pottery jars on metal ions and flavor substances during the storage process of Maotai-flavored Baijiu. It was found that changes in the content of Fe and Zn metals, as well as pore parameters in the jars, significantly affected the content of AL, Mg, K, Na, and Ca ions in Baijiu.

The catalytic performance of 2D nanostructure-based heterogeneous catalysts is highly dependent on their dispersibility and stability. This work presents the grafting of polymer brushes onto 2D Cu-based metal-organic framework (MOF) nanoplates via a versatile UV-induced radical polymerization approach for CO fixation through the cycloaddition reaction with epoxides. The polymer brushes are selectively anchored to the external surfaces of the nanoplates, which greatly improves the long-term dispersibility and stability in solvents while preserving their intrinsic porosity and crystalline structures.

A Rh(III)-catalyzed dearomative C3 alkoxylation of indoles via cascade C(sp)-H activation and 1,2-alkoxyl shift rearrangement has been developed. This method provides an efficient strategy to rapidly assemble 3-alkoxyindolin-2-one scaffolds using alcohols as alkoxyl sources. Mechanistic studies indicate that indolyl C2 alkoxylation followed by Ag(I)/Cu(II)-mediated 1,2-alkoxyl migration is involved in this transformation.

Electrolytic manganese residue (EMR) was used as a support to prepare novel EMR-supported catalysts for the heterogeneous Fenton degradation of acetaminophen. Among the five supported catalysts, Co/EMR showed the highest catalytic activity. Several important factors influencing the decay of acetaminophen, including Co loading content, catalyst dosage, HO concentration and initial solution pH, were investigated.

Herein, we present a method for copper-catalyzed photoinduced radical Mizoroki-Heck (M-H) reactions utilizing unactivated alkyl iodides and styrene. This approach enables the smooth generation of ()-olefin products with a good functional group tolerance, demonstrating broad applicability. The mechanism involves the in situ formation of a copper complex that binds to the alkyl iodide, leading to radical fragmentation under visible-light irradiation.

The direct and rapid detection of high-concentration tannic acid (TA) was crucial for food quality monitoring. In this study, a TA detection system was developed based on a binary metal V and Co-enclosed carbon substrate (VCo-N-C) nanozyme with laccase-like activity, which innovatively shifted the conventional detection approach from the 3,3',5,5'-tetramethylbenzidine (TMB) discoloration principle to the 4-aminoantipyrine(4-AP) color enhancement principle. In the presence of VCo-N-C, 4-AP specifically bound to the oxidation products of TA, resulting in a brown-red compound.

This study was conducted to investigate the effects and mechanisms of all- lycopene on intestinal health by establishing lipopolysaccharide-induced (LPS-induced) jejunal inflammation model. Dietary lycopene supplementation enhanced serum and jejunum antioxidant capacity. Lycopene significantly reduced LPS-induced upregulation of toll-like receptor-4 (TLR-4) and nuclear factor kappa-B (NF-κB), suggesting that lycopene reduced the activation of TLR-4/NF-κB signaling pathway induced by LPS challenge, and further protected mice from LPS induced jejunal inflammation.

Sulfur mustard (HD) alkylates biomolecules such as proteins, generating specific biomarkers. This study employs steric hindrance, electronic effects, and solvent effects through an occupancy-removal strategy to synthesize regioisomers [N1-HETE]-His and [N3-HETE]-His, overcoming isomer separation challenges in conventional methods. Density functional theory (DFT) calculations revealed hexafluoroisopropanol (HFIP)'s critical role in directing HD's regioselective alkylation: HFIP modulates steric and electronic environments to preferentially target N1 or N3 sites of histidine imidazole rings, with predictions validated experimentally.
