Resveratrol is a natural polyphenol known for its antioxidant and anti-inflammatory effects, but its role in lung adenocarcinoma (LUAD) remains unclear. Our study integrated network pharmacology, molecular docking, and bioinformatics to investigate the molecular mechanisms by which resveratrol suppresses LUAD through the identification of key targets and pathways. We identified 100 resveratrol-related targets and 50,000 LUAD-related genes from databases, finding 98 overlapping targets.

Huajiao seeds represent an underutilized high-quality woody oilseed resource rich in unsaturated fatty acids and diverse nutritional factors. This study presents a biopreservation method using sourdough co-fermented with Fructilactobacillus sanfranciscensis and Propionibacterium freudenreichii, optimizing conditions to 220 hydration and 24 h fermentation. The composite sourdough bread quality was evaluated through physicochemical, storage, sensory, and microbial tests, with mechanisms analyzed based on microstructure, rheology, and dough structure. Results showed that: first, the composite sourdough enhanced bread physicochemical properties, increasing volume, height-to-diameter ratio, elasticity, and resilience, while reducing baking loss, hardness, chewiness, and adhesiveness.

In this study, the effects of high hydrostatic pressure (HHP)-mediated alterations in matrix composition on the bioaccessibility of carotenoids in satsuma mandarin juice were assessed. Results showed that the total carotenoid content increased significantly under HHP treatment (300-600 MPa), and the total carotenoids bioaccessibility was optimal at 600 MPa/1 min. The bioaccessibility of carotenoids in satsuma mandarin juice was positively correlated with the contents of titratable acids, total phenols and total sugars, all of which increased significantly after HHP.

While restructuring agricultural products enhances heat and mass transfer during freeze-drying, the underlying mechanisms remain poorly understood. This study employed a multiscale approach, combining freezing dynamics, sublimation drying kinetics, X-ray tomography, gas permeability assessments, thermodynamic parameters analysis, and mathematical modeling to systematically investigate the differences in transfer properties between natural and restructured peaches across the freezing and sublimation drying processes. This study aimed to investigate the protective mechanism of Osmanthus fragrans water extract (OSF) against liver injury induced by dibutyl phthalate (DBP). We utilized liver organoids and liver organ chip technology to replicate the liver microenvironment in vivo. The poor foaming of egg yolks has long plagued the food industry. In this study, four egg yolk spheres (EYS) were prepared via acid- and alkaline pH-shift methods, and the main factors affecting the variation in their foaming capacity were determined. The photovoltaic performance of CuZnSn(S,Se) is limited by open-circuit voltage losses (ΔV) in the radiative (ΔV) and non-radiative (ΔV) limits, due to sub-bandgap absorption and deep defects, respectively. Recently, several devices with power conversion efficiencies approaching 15% have been reported, prompting renewed interest in the possibility that the key performance-limiting factors have been addressed.
