Interactions between polysaccharides and ionic liquids (ILs) at the molecular level are essential to elucidate the dissolution and/or plasticization mechanism of polysaccharides. In this study, we reported a facile strategy to produce an interfacial crystallized oleogel emulsion for improved thermal stability.
