This study investigated the key volatile substances using SPME-GC-MS and metabolites using LC-MS, as tilapia fillets before and after steaming and boiling during refrigeration. Results indicated untreated, steamed, and boiled tilapia fillets post-refrigeration exhibited 15, 22, and 23 key volatile substances, respectively, primarily aldehydes, alcohols, and ketones. 97, 70, and 67 differential metabolites were identified by PLS-DA, respectively.

Although pulp residues polysaccharides (HPPP) have shown potential in improving metabolic disorders and intestinal barrier function, the mechanism by which they exert their effects through regulating O-glycosylation modifications in the mucus layer remains unclear. Therefore, this study established a HFD-induced obese colitis mouse model ( = 5 per group) and combined nano-capillary liquid chromatography-tandem mass spectrometry (nanoLC-MS/MS) technology to quantitatively analyze the dynamic changes in O-glycosylation. Additionally, through quantitative O-glycosylation proteomics and whole-proteome analysis, we identified 155 specifically altered O-glycosylation sites in colon tissue, with the glycosylation modification level of the MUC2 core protein increased by approximately 2.

During food processing and storage, traditional protein-based delivery systems encounter significant challenges in maintaining the structural and functional integrity of bioactive compounds, primarily due to their temporal instability. In this study, a nanocomposite hydrogel was prepared through the co-assembly of a self-assembling peptide, 9-Fluorenylmethoxycarbonyl-phenylalanine-arginine-glycine-aspartic acid-phenylalanine (Fmoc-FRGDF), and hyaluronic acid (HA). The interactions between grass carp myofibrillar proteins (MPs) and selected aldehydes under different pH conditions were analyzed. The results showed that the binding capacity of MPs to the aldehydes followed the order: nonanal > octanal > hexanal, and their binding capacity increased with rising pH (5-9). MPs-aldehyde interactions exhibited static and dynamic quenching, predominantly mediated by hydrophobic forces, with pH exerting no effect on the quenching mode.

To address the quality degradation in surimi products due to lipid loss, the oil-modified starch made by amylose corn starch and fish oil was used to investigate the comprehensive structural characterization of fish oil-modified starch and its influence on surimi product quality. The results indicated that hydrothermal treatment temperature played a key role in the successful preparation of fish oil modified starch. At a modification temperature of 90 °C, the CI of fish oil-modified starch reached a maximum of 59.

This study explored the effect of interaction between starch and water on 3D printing adaptability of surimi, a topic that has received limited attention in previous research. The 3D printability of surimi-starch systems was examined under controlled moisture conditions, and notable enhancements in printing quality were observed when starch concentrations were adjusted to 8-12 % (with a fixed water content of 70 %) or reduced to 4 % with a corresponding increase in water to 80 %. To gain further insights, we investigated myofibrillar protein-potato starch blend system and manipulated the proportions of the constituents and water content, using LF-NMR technology to analyze the competitive adsorption of water molecules among the components.

Oleogels can replace animal fat and improve quality in gelled products.
