This study investigated the individual and combined effects of α-amylase (6 and 10 ppm), xylanase (70 and 120 ppm), and cellulase (35 and 60 ppm) on the physicochemical and nutritional properties of Chinese steamed buns (CSBs) supplemented with 15% buckwheat flour. The addition of individual enzymes did not significantly affect the volume or texture of the buckwheat-enriched CSBs, although it increased the crumb moisture content and porosity. In contrast, enzyme combinations can improve specific volume and reduce hardness.

Space exploration continues to drive technological and scientific advancements, benefiting both space and Earth. This expanding sector, including commercial space stations, deep-space missions, and space tourism, presents unique challenges and opportunities for food researchers. A critical issue is the limited understanding of how space conditions such as microgravity, isolation, and confinement affect sensory perception, impacting astronauts' nutritional intake and psychological well-being.

Freekeh, a traditional Middle Eastern cereal derived from wheat, is gaining global recognition as a climate-resilient, nutrient-dense alternative to commonly consumed staples such as white rice and refined wheat. It offers a compelling solution to pressing challenges in nutrition, sustainability, and food security. Compared to conventional grains, Freekeh's cultivation requires less irrigation and fertilizer, supporting more sustainable agricultural practices without compromising nutritional value.

Natural polysaccharides have been attracted increasing attention in biopesticides for the antiviral effects. Tobacco leaves enriched the polysaccharides and had the potential against tobacco mosaic virus (TMV), however, the chemical structure and anti-TMV effect of polysaccharides from discarded tobacco leaves (DTCP) are still unclear. In this study, an optimized condition for extraction time of 3.

View Article and Find Full Text PDFAmyotrophic lateral sclerosis (ALS) is a fatal neurodegenerative disorder marked by progressive motor neuron degeneration in the primary motor cortex (PMC) and spinal cord. Aging is a key factor in ALS onset and progression, with evidence suggesting that biological aging-a process involving cellular decline- far outpaces chronological aging in ALS. This promotes senescent cell accumulation-marked by irreversible cell-cycle arrest, impaired apoptosis, and chronic inflammation-disrupting tissue homeostasis and impairing neuronal support functions.

Currently, no effective treatments are available. To enhance translational research using aged mouse models, we developed and validated the weighted cart pull (WCP) as a novel assessment of sustained motor function.

This binary system overlooks the complexity of fibre structures and their diverse health effects. Indeed, soluble fibre is not just soluble but has important qualities such as fermentability, attenuating insulin secretion, and lowering serum cholesterol.

Herein, we investigated the formation and distributions of these aldehydes in FSBF, and the frying oil and FSBF retained higher levels of low-molecular-weight aldehydes. The highest aldehyde concentrations were observed in French fries.

The impact of sarcopenia is expected to rise as the aging population grows, and treatments remain limited. Therefore, novel approaches for enhancing physical function and strength in older adults are desperately needed.

However, nutrient-rich aquatic product is susceptible to lipid oxidation during storage and transport, reducing its nutritional value and increasing safety risks. Therefore, identifying the specific effects of lipid oxidation on aquatic products has become particularly critical.

This study investigates food odour perception and affective response within a virtually simulated spacecraft environment, with links to the volatile composition of odours. Healthy participants (n = 44) between the ages of 18-39 years rated the intensity of eight food odours in two simulated space environments for comparison, a 'microgravity' posture (MicroG Posture; physical) and Virtual Reality (VR; visual-spatial cues) simulation of a spacecraft. Results indicate that these methods yield different outcomes.

The rising demand for premium quality fruits and vegetables has resulted in an increased necessity for the advancement in active food packaging. This study aimed to develop eugenol-loaded Ag@MOF/poly(lactic acid) (Ag@MOF-EU/PLA) composite films to assess their efficacy in preserving zucchini. The results revealed that Ag@MOF-EU can be uniformly distributed within the PLA matrix, which significantly enhanced the tensile strength, hydrophobicity, and UV-blocking capacity of PLA films, and at the same time had no significant effect on the thermal properties and WVP of the PLA films.
