The milling process is a critical technological step that regulates wheat flour characteristics and ultimately determines end-product quality. This study systematically investigated the impact mechanism of hot-air drying temperature (40°C-80°C) on moisture migration, crack formation, and the microstructural evolution of corn kernels. Using multi-scale characterization techniques such as low-field nuclear magnetic resonance, scanning electron microscopy, and Fourier transform infrared spectroscopy, this study revealed temperature-gradient-driven changes in microscopic mechanical properties. The results showed that increasing the drying temperature accelerated moisture evaporation while exacerbating internal moisture gradients, which led to greater thermal stress and promoted crack formation.

This study investigated the effects of physical field protein modification methods on the mechanical properties, color, rehydration performance, thermal stability, and sensory quality of yuba. The results showed that all three modification methods shortened the drying time of yuba, and each method enhanced the tensile strength and thermal stability of yuba. Yuba treated with microwave-vacuum for 10 min demonstrated the best performance in terms of tensile strength, elongation, color, and overall sensory score, making it the optimal method for the physical field modification of yuba.

This study aims to investigate the effect of fatty acids with different degrees of saturation on the microwave freeze-drying (MFD) characteristics and crosslinking behavior of wheat starch-fatty acid composite systems. In the composite system, with the increase in the unsaturation of fatty acids, the initial moisture content also increased. In terms of drying characteristics, both the MFD curve and the MFD rate curve indicate that composite systems of wheat starch with higher unsaturation levels respond more stably to changes in microwave power throughout the MFD process.

This study aimed to assess the correlation between moisture migration and texture, as well as viscoelasticity of Chinese yam during the evaporation stage of multiphase microwave drying (MMD). A comparison of different drying strategies (Scheme I, Scheme II, and Scheme III) revealed that the water molecule mobility decreased as drying proceeded. In samples with higher water content at the transition point, the rapid migration of water during evaporation stage could result in a more pronounced collapse of the cellular and pore structure, leading to a denser product with increased hardness.

The function of super-enhancers (SEs) in pulmonary hypertension (PH), especially in the proliferation of pulmonary artery smooth muscle cells (PASMCs), is currently unknown. We identified SEs-targeted genes in PASMCs with chromatin immunoprecipitation (ChIP)-sequence by H3K27ac antibody and proved that CBP/p300-interacting transactivator with Glu/Asp-rich C-terminal domain, 2 (CITED2) is an SEs-targeted gene through bioinformatics prediction, ChIP-PCR, dual-luciferase reporter gene assays and other experimental methods. We also found that the expression of CITED2 and the transcription factor Forkhead Box J3 (FOXJ3) was reduced in hypoxic mouse PASMCs.
