Minglv-flavor (MLF) Baijiu, brewed with mung beans, exhibits a characteristic aroma profile. However, key aroma compounds and dynamic evolution during aging have not been systematically investigated. Through recombination and omission experiments, 21 key aroma compounds were confirmed, including ethyl hexanoate, ethyl butyrate, ethyl pentanoate, ethyl octanoate, ethyl 3-methylbutanoate, ethyl 2-methylpropanoate, ethyl 2-methylbutanoate, hexanoic acid and pentanoic acid, which synergistically constituted the aroma profile of MLF Baijiu, characterized by a prominent mung bean aroma accompanied by harmonious fruity and floral notes.

Gene expression is modulated jointly by transcriptional regulation and messenger RNA stability, yet the latter is often overlooked in studies on genetic variants. Here, leveraging metabolic labeling data (Bru/BruChase-seq) and a new computational pipeline, RNAtracker, we categorize genes as allele-specific RNA stability (asRS) or allele-specific RNA transcription events. This paper explores the U-shaped relationship between marketization and corporate capital structure using panel data from Chinese listed firms (2012-2021). Applying fixed effects and nonlinear regressions, we find that as marketization increases, leverage first declines and then rises, confirming a robust U-shaped pattern. In early reforms, improved institutions reduce debt reliance; in advanced stages, enhanced capital markets facilitate debt access.

Artificial water diversion is widely used to address water security; yet, its impacts on phytoplankton communities and coastal carbon balance remain poorly understood. Using a seasonal diversion project in a semi-enclosed bay as a case study, we analyzed phytoplankton composition via morphological methods and assessed carbon balance through simultaneous measurements of primary production (P), ecosystem respiration rate (R), and production-to-respiration (PP/R) ratio. Our results showed that artificial water diversion activities during the wet month enhanced hydrological connectivity and phytoplankton homogeneity, triggering a mixed diatom-dinoflagellate bloom.

Sweet potato stems and leaves (SPSL) are rich in bioactive polyphenols, yet their utilization remains underexplored. This study established an efficient method for SPSL polyphenol enrichment using macroporous resins, with UHPLC-QE-MS/MS characterization of the purified polyphenols (PP) and subsequent evaluation of anti-inflammatory activity. The results showed that NKA-II resin demonstrated the best purification effect on SPSL polyphenols among the six tested resins.
