Article Abstract

Little is still known about both the effect of amino acids on the oxidation course of edible oils and the modifications that the former may undergo during this process. Bearing this in mind, the objective of this work was to study the evolution of a system consisting of soybean oil with 2% of l-lysine under heating at 70 °C and stirring conditions, analyzing how the co-oxidation of the oil and of the amino acid affects their respective evolutions, and trying to obtain information about the action mechanism of lysine on soybean oil oxidation. The study of the oil progress by H Nuclear Magnetic Resonance (H NMR) showed that the presence of lysine noticeably delays oil degradation and oxidation products generation in comparison with a reference oil without lysine. Regarding lysine evolution, the analysis by H NMR and Liquid Chromatography-Mass Spectrometry of a series of aqueous extracts obtained from the oil containing lysine over time revealed the formation of lysine adducts, most of them at the position, with n-alkanals, malondialdehyde, ()-2-alkenals, and toxic oxygenated α β-unsaturated aldehydes. However, this latter finding does not seem enough to explain the antioxidant action of lysine.

Developing amphibious adhesives that combine high adhesion strength with on-demand erasability in both dry and wet environments remains a significant challenge. In this study, biomass-derived, amphibious, and erasable adhesives are fabricated by grafting 3-aminobenzoic acid and 3-aminobenzeneboronic acid onto epoxidized soybean oil (ESO), yielding ESO-Am adhesives. These adhesives are dynamically cross-linked with boroxines, hydrogen bonds, and hydrogen-bonded hydrophobic nanodomains.

A dynamically crosslinked network VEC (vulcanized ESO and CA) was synthesized in situ via zinc acetate-catalyzed epoxy ring-opening between epoxidized soybean oil (ESO) and anhydrous citric acid (CA), then incorporated into polylactic acid (PLA)/polybutylene adipate terephthalate (PBAT) blends to enhance interfacial compatibility. The dynamic ester-exchange network acted as an intermediate phase, improving the integration of the flexible PBAT phase within the rigid PLA matrix. VEC content critically influenced mechanical properties, with in-situ crosslinking during dynamic vulcanization enhancing chain interactions and blend homogeneity.

Lipids are commonly added to starchy foods to improve both their sensory attributes and nutritional value. This study investigated the regulatory mechanisms of butter and soybean oil on the starch structure and digestibility in cooked chestnut paste (CCP). X-ray diffraction and complexing indices revealed the formation of V-type crystalline complexes, with soybean oil exhibiting a stronger complexation capacity due to its the flexible properties of unsaturated fatty acids.
