Sodium alginate-combined ultrasonic (SA-US) modification of wheat flour and corn starch was characterized to investigate its effects on batter properties and fried fish crispiness. This modification significantly increased hydration properties, and gelatinization temperature of wheat flour and corn starch (P < 0.05), while decreasing short-range structure, double helices, crystallinity, and starch granules' integrity.

Circulating levels of 3-carboxy-4-methyl-5-propyl-2-furanpropionic acid (CMPF), a metabolite derived from dietary furan fatty acids primarily found in marine food sources, have long been recognized as biomarkers for fish intake. However, elevated CMPF levels are also observed in patients with type 2 diabetes or chronic kidney disease and in healthy people associated with a reduced infection risk, suggesting potential bioactive roles in metabolism and immune function. Yet, the possible causal mechanisms behind these associations are unknown.

The polyunsaturated fatty acids in fish oil are prone to oxidation and have poor dispersibility, which limits their use in the food sector. In this work, oil-in-water emulsions stabilized by chitin nanocrystals (ChNC) were prepared via high-speed homogenization. Anionic carboxymethyl cellulose (CMC) was assembled onto cationic ChNC-stabilized emulsion droplet surfaces via layer-by-layer self-assembly technology to construct ChNC/CMC (Ch-C) bilayer emulsions with rigid inner layer and flexible outer shell structures.

The detection of Ethyl maltol (EM), Gallic acid (GA), and Rotenone in food is critical for preventing foodborne diseases. This study developed a new terbium-based metal-organic framework (Tb-MOF) for ultrasensitive multi-target detection in complex food matrices leveraging competitive absorption mechanism. It is the first MOF-based sensor detecting EM with LOD of 0.

Background: Soybean oil lipid emulsions have been implicated in the development of parenteral nutrition-associated cholestasis (PNAC) in premature infants. A recent mixed fatty acid emulsion containing soybean oil, medium-chain triglycerides (MCTs), olive oil, and fish oil may reduce the incidence of PNAC, but evidence remains conflicting. The aim of this study was to evaluate the effect of mixed fatty acid emulsion on PNAC in extremely low-birth-weight (ELBW) infants.
