Heart failure (HF) represents a significant public health concern, characterized by elevated rates of mortality and morbidity. Recent advancements in gene sequencing technologies have led to the identification of numerous genes associated with heart failure. By utilizing available gene expression data from the Gene Expression Omnibus (GEO) database, we conducted a screening for differentially expressed genes (DEGs) related to heart failure.

A green and scalable strategy is proposed for reducing the viscosity of high-concentration cod protein (CPs) solutions through structural reengineering driven by reductive disulfide bond cleavage. NaSO selectively disrupts disulfide bonds, inducing conformational unfolding to expose buried hydrophobic domains.

Introduction: Reproductive health in mares is pivotal for the sustainability of the equine industry, yet vaginal microbiota dysbiosis remains an underrecognized contributor to infections such as endometritis and bacterial vaginosis. While spp. dominate healthy vaginal ecosystems in humans and livestock, their role in equine reproductive health, particularly in resilient breeds like Mongolian mares, is poorly understood.

This study investigated the effects of Tricholoma matsutake polysaccharides (TMP) and proteins (TMPN) on the gelatinization, rheology, structural properties, and in vitro digestibility of rice flour (RF). TMP and TMPN 5 % (w/w) were incorporated into RF, their impacts were analyzed using rapid viscosity analysis (RVA), dynamic rheology, differential scanning calorimetry (DSC), X-ray diffraction (XRD), Fourier-transform infrared spectroscopy (FTIR), scanning electron microscopy (SEM), thermogravimetric analysis (TGA), in vitro digestion assays, and α-amylase inhibition assays.

However, its heat-induced aggregation behavior, particularly in salt-containing systems, remains a key barrier to commercialization. Previously, modified whey protein (MWP) with thermostability in the presence of NaCl was synthesized through controlled aggregation.

While environmental exposures, such as brominated flame retardants (BFRs), have been suggested as risk factors, their role in emphysema prediction has been largely overlooked. This study aimed to develop a machine learning (ML) model to predict emphysema risk incorporating BFRs exposure data and demographic characteristics.

We thereby developed an umami biosensor based on taste bud organoids and flow cytometry (TOS-FC), which exhibits a broad dynamic range (10 to 2 × 10 M for monosodium glutamate (MSG)), strong linear correlation (R > 98 %), and stable operability beyond sensor lifespan. The TOS-FC platform successfully quantified three representative umami stimuli-MSG, inosine 5'-monophosphate (IMP), and glutamic acid-proline dipeptide (EP, a representative umami peptide).

Colitis in equines has high morbidity and mortality rates, which severely affects the development of the equine-breeding industry. With the issuance of antibiotic bans, there is an urgent need for healthier and more effective alternatives. In recent years, probiotics have been widely used as microbial feed additives in animal husbandry, playing a crucial role in preventing and treating diarrhea and regulating host immune function.

Despite being a relatively stable macromolecular protein that can withstand high temperatures and extreme pH conditions without its structure and activity being compromised, oral administration of ferritin may still result in its degradation within the gastrointestinal tract, reducing its bioavailability. In recent years, microcapsules have emerged as an effective approach in oral protein delivery to enhance bioavailability.

Results: In this study, we proposed a simple yet effective strategy to enhance the formation rate and tensile strength of yuba films by introducing calcium ions and sodium metabisulfite (SM). Results show that calcium ion increased the density and continuity of the yuba films, while SM led to the formation of larger protein particles.

High-protein, high-fiber foods are in the spotlight because of their health properties. Due to aggregation during heat treatment when dietary fiber is added, the amount of soy protein that can be used in the formulation of high-protein, high-fiber foods is limited. The effects of two types of soluble dietary fibers, β-cyclodextrin (β-CD) and resistant dextrin (RD), on the tunable thermal stability of soy proteins (SPs) and preheat-modified soy protein particles (SPPs), as well as the underlying mechanisms, were investigated.
