Nitrite pollution poses a serious threat to human health and the environment. In this study, a reliable and selective electrochemical (EC) sensor was developed for the quantitative determination of nitrite by combining flower-like three-dimensional (3D) MoS microspheres with two-dimensional (2D) CN nanosheets. Benefiting from the synergistic effects of MoS and CN, the 3D MoS/2D CN nanocomposite displayed numerous active sites, a 3D mesoporous structure, high conductivity and excellent catalytic activity. The 3D MoS/2D CN-modified glassy carbon electrode (GCE) exhibited a superior electrocatalytic activity toward nitrite oxidation, with a wider linear detection range (0.1-1100 μM), a lower detection limit (LOD) (0.065 μM, S/N = 3), outstanding stability, remarkable reproducibility and strong selectivity. Furthermore, the nitrite EC sensor was successfully applied to detect actual food and environmental samples involving sausage, pickled vegetables, river water and tap water, thus demonstrating the potential of the prepared 3D MoS/2D CN/GCE for food analysis and environmental monitoring.

The present study aimed to (1) evaluate the effects of different concentrations of the polysaccharide extract of Cissus sicyoides (PE-Cs) during in vitro culture of preantral follicles included in goat ovarian tissue on (i) follicular morphology and activation, (ii) ovarian stromal density, (iii) follicular and oocyte diameters, (iv) antioxidant enzymes activity (SOD, CAT, and GPx), (v) quantification of MDA, thiol, and nitrite levels; as well as to (2) measure the total antioxidant capacity of the extract. The ovarian cortex fragments were cultured at 39 °C in a humidified atmosphere with 5% CO for 6 d in alpha-modified minimum essential medium (αMEM) supplemented with insulin, transferrin, and selenium; hypoxanthine; glutamine; and bovine serum albumin, which was called αMEM alone or added of PE-Cs at 20, 40, or 80 µg/mL. At the end of the culture period, a reduction in the percentage of normal follicles in all treatments using PE-Cs compared to fresh control and αMEM.

In this study, yak bone collagen peptide-tea polyphenol binding peptides (YCP/TP) were successfully prepared and investigated for their positive effects in replacing nitrite to improve the color, texture, flavor and bacterial community structure of fermented sausages. Results showed that YCP/TP primarily binds through hydrogen bond interactions, enhancing its stability and functional properties. The YCP/TP can effectively inhibit the increase in pH, protein carbonyls and TBARS (p < 0.

Nitric oxide (NO) is essential for cardiovascular health and is purported as an ergogenic aid. Endothelial dysfunction and reduced endogenous NO production are hallmarks of heart failure (HF), which may contribute to impaired exercise capacity. Oral inorganic nitrate supplementation offers an exogenous route to increase bioavailable NO via reduction of nitrate by oral commensal bacteria.

Nitrogen-nitrogen (N-N) bond-forming enzymes are rare but play vital roles in both primary and secondary metabolism. Guided by a nitric oxide synthase (NOS)-based genome mining strategy, we report the discovery and characterization of a new heme-dependent enzyme system that catalyzes intermolecular N-N bond formation. Using both in vivo and in vitro reconstitution approaches, we demonstrated that a protein complex, comprising a heme enzyme and a 2[4Fe-4S] ferredoxin partner, mediates the coupling of the α-amine group of l-aspartate with inorganic nitrogen oxide species, such as nitrite or nitric oxide, to generate hydrazinosuccinic acid, a key biosynthetic precursor in several natural product pathways.

Unlabelled: Green tea is one of the most widely drunk beverages globally; It is made from the processed leaves of the green shrub . The background study focused on the contained catechins and their hydrolysis by tannase-producing KMS2-2 strains were investigated. Tannin acyl-hydrolase is an inducible enzyme extensively used in the food industry.
