This study revealed the mechanism by which Ficus awkeotsang Makino pectin (JFSP) and pea protein isolate (PPI) synergistically formed plant protein-polysaccharide composite gels via spontaneous gelation. The results showed that when the JFSP concentration was >0.1 % (w/v), it could synergistically form a self-supporting gel with 3.

Oleosomes, naturally occurring in plants, mammals, and microorganisms, are highly valued in both food and non-food industries due to their unique composition, inherent emulsifying properties, and straightforward extraction processes. Despite advancements in twin-screw pressing and ultrasound-assisted methods, this review emphasizes the need to systematically explore aqueous-based method-including aqueous, aqueous enzymatic, salt-solution extraction, and alkali-solution extraction method-that have been underrepresented. For the first time, it highlights how factors such as polyphenols, polysaccharides, pH, temperature, and ionic conditions influence oleosome stability and digestion, which are critical for lipid release, absorption, and nutritional improvement-key aspects aligned with the development of functional foods.

Controlling the quality characteristics of tofu by adjusting the soybean protein gelling behavior has always been a challenging and intriguing task. While tofu prepared with emulsion coagulants exhibits high yield, it suffers from compromised gel strength and water-holding capacity. This study introduced ultrasound pretreatment coupled with emulsion coagulants to modulate soy protein gelation during tofu formation.

Walnut protein (WP) possesses considerable nutritional and biological value, however, the 70% water-insoluble gluten composition constrains its applicability in commercial settings. The effect of different concentrations of kappa-carrageenan (KC) on the properties of WP gels was investigated in this study. The results suggested that hydrophobic interactions are the most important force when WP/KC gels are formed.

The developing of green plant based protein as excellent emulsifier to prepare stable O/W emulsion has become crucial in food processing. This study investigated the emulsification property enhancing of pea protein isolate (PPI) through glycation with wheat bran arabinoxylan (WBAX) to form a covalent complex (PPI-WBAX), the stability and the application in encapsulating β-carotene of the prepared PPI-WBAX emulsion. Results showed that glycation improved the emulsification property of PPI as evidenced by the increased emulsifying activity index (6.

Background: Benign adrenal tumors comprise the majority of asymptomatic adrenal masses and are often associated with cortisol secretion, which increases the risk of obesity and metabolic syndrome. Hormone secretion by these tumors may confound prevailing epidemiologic findings, and the causal relationships among obesity, body fat, and benign adrenal tumors remain uncertain. Mendelian randomization (MR) uses genetic variation as an instrumental variable to simulate randomized controlled trials, thereby reducing confounding and supporting causal relationships.

Overactive Bladder (OAB), characterized by urinary urgency with frequency and nocturia, affects approximately 12 % of the adult female population's quality of life. Estrogen, known for its role in modulating lower urinary tract function, is commonly prescribed to alleviate urogenital symptoms in menopausal women. However, the efficacy of oral estrogen in treating OAB remains controversial.

Early-onset kidney cancer (EOKC) is often associated with genetic factors and a high risk of metastasis. However, there is a lack of accurate prediction models for the prognosis of EOKC. The aim of this study is to establish an effective nomogram for predicting and evaluating the prognosis of patients with EOKC.

The aim of this study was to explore the effects of environmental factors (salt ions and pH) on the thermal gelation process of deamidated soy protein isolate (DSPI). The results indicated that with increasing salt ion concentration, DSPI assembled into larger aggregates, which were more prone to aggregation in thermal reactions, ultimately forming a gel network with higher viscoelasticity. The strength enhancement of ion-induced gel networks followed the order from highest to lowest: Ca > Mg > Na.

Clear cell renal cell carcinoma (ccRCC) and ischemic stroke are critical global health challenges with a notable association. This study explores the correlation between tumor-related factors and ischemic stroke risk, aiming to construct a predictive nomogram model for ischemic stroke in ccRCC patients. We retrospectively analyzed data from ccRCC patients who underwent nephrectomy at the First Hospital of Shanxi Medical University between January 1, 2013, and May 31, 2022.

This study aims to evaluate the prognostic significance of preoperative serum cystatin C (Cys-C) in patients with renal cell carcinoma (RCC). We analyzed clinicopathological data and follow-up information of 624 RCC patients who underwent partial or radical nephrectomy at our institution. The optimal cutoff value of Cys-C was determined using X-tile software.

Article Synopsis
  • The study assesses the prognostic value of the geriatric nutritional risk index (GNRI) in patients with non-metastatic clear cell renal cell carcinoma (ccRCC) who had undergone nephrectomy.
  • A total of 645 patients were analyzed, revealing that those with a GNRI of 98 or below had significantly worse overall survival (OS), cancer-specific survival (CSS), and recurrence-free survival (RFS) compared to those with a higher GNRI.
  • GNRI was identified as an independent prognostic factor, and even after adjusting for confounding variables, the negative impact of a low GNRI on patient outcomes remained evident.

Article Synopsis
  • This study focused on the gelation properties and behaviors of Ficus awkeotsang Makino pectin (JFSP) in acidic environments (pH 3.4-4.5), highlighting its ability to form gels without added metal ions.
  • At optimal pH levels (3.75-4.05), JFSP formed strong gel networks with significant stability, influenced by hydrogen bonds, while changes in pH affected the gel's structure and stability.
  • The research offers insights into how JFSP behaves under low acidity, which could benefit future food formulation efforts that require stable gel-like textures in similar conditions.

This study aimed to investigate the effects of different wheat bran arabinoxylan (WBAX) concentrations (1, 2, 3, and 4 wt%) on the structural and physicochemical properties of WBAX-soybean protein isolate (SPI) emulsion-filled gels (EFGs) prepared using laccase and heat treatment. The properties of the various gels as well as their microstructure, rheology, and in vitro digestion behaviors were investigated. Results showed that WBAX-SPI EFGs with a 3 wt% WBAX concentration had a smooth and uniform appearance, high water holding capacity (98.

Article Synopsis
  • The study investigates renal artery variations in patients with renal cell carcinoma, focusing on how accessory renal arteries might predict the cancer's pathological grading.
  • Researchers analyzed data from patients at a hospital and used 3D imaging to compare the incidence of renal artery variations between affected and healthy kidneys.
  • Findings indicate that the presence of an accessory renal artery in the affected kidney correlates with larger tumor size and higher cancer grades, making it a potential predictor of advanced renal cell carcinoma.
