Human applications of surfactants have been diverse, from their initial use as detergents to their subsequent utilization in a multitude of other fields, including medicine, lubricants, cosmetics, and even assisted oil recovery. Nevertheless, the most significant challenge lies in the synthesis of surfactants. A particular challenge is the purification of compounds following chemical synthesis, as well as the toxic effect of the solvents used. Consequently, there is a growing need for more environmentally friendly solutions, namely solvents that are less toxic and more biocompatible, as well as reactions in which an enzyme serves as a catalyst. This review examines the various methods of synthesizing sugar esters and glycolipids, evaluating their respective advantages and disadvantages.

Baijiu is a traditional distilled liquor unique to China. Its distinctive flavor is shaped by the synergistic activity of complex microbial communities, among which yeasts play a central role in sugar metabolism, ethanol fermentation, and aroma synthesis. In recent years, the advancement of isolation and cultivation techniques, high-throughput sequencing, metagenomics, and multi-omics technologies has deepened our understanding of yeast community compositions, succession patterns, and functional characteristics during Baijiu brewing.

Microwave (MA)- and ultrasonic-assisted (UA) alkalization were applied to cocoa powders for 5, 10, and 15 min to investigate their effects on metabolite composition, sensory profile, and consumer liking. Widely targeted gas chromatography-mass spectrometry (GC-MS) analysis showed alkalization altered metabolite profiles: Natural cocoa powders contained more amino acids, sugars, and flavonoids, while alkalized samples had elevated organic acids. Compared to conventionally alkalized (CA) samples, only UA15 showed a significant increase in 3,4-dihydroxybenzoic acid.

Thermal impregnation (TI) is a traditional method of sugar infusion, but it has disadvantages such as long processing time and uneven sugar distribution. Therefore, developing sugar impregnation methods to enhance product flavor, nutritional value, and processing efficiency is critical for addressing potential quality loss and efficiency bottlenecks in traditional preserve processing technologies. This study took the TI process widely adopted in Xinjiang over the long term as a reference and systematically compared the effects of vacuum impregnation (VI) and ultrasonic-assisted impregnation (UI) on the flavor characteristics and physicochemical properties of plum preserves.

Purpose: This study designed a dopamine derivative integrating active targeting and pH-responsive borate ester bond-mediated passive targeting to construct drug delivery systems for tumor-targeted drug delivery, thus improving antitumor drug bioavailability and expanding the application of dopamine in drug delivery.
Methods: Nuclear magnetic resonance and Fourier transform infrared spectrometry were used to determine the structures of Man-PBA-DAO and Man-2PBA-DAO. Hydrodynamic diameter measurements confirmed the pH responsiveness of the targeting nanoparticles in different pH media over 12 hours.

This study pioneers the development of high-performance poly(-phenylene isophthalamide) (PMIA) ultrafiltration membranes through synergistic integration of nonsolvent-induced phase separation (NIPS) and surface segregation techniques, employing sugar esters (SE-15) as an eco-friendly additive. Comprehensive characterization techniques were systematically conducted to investigate the influence of SE-15 on the microstructure, surface property and perm-selectivity of the SE-15/PMIA membranes. Specially, the nanoscale X-ray microscopy (Nano-CT) technique was employed to delve deeply into pore structures, revealing the effect of adding SE-15 on the evolution of pore channels.
