This study aims to improve the solubility of kaempferol (KA) by preparing a kaempferol phospholipid complex (KA-PC), which can be applied to prevent soybean oil from spoilage. KA-PC was prepared by solvent evaporation and characterised by FTIR, DSC, and XRD. Furthermore, KA-PC was added to soybean oil and the peroxide value and acid value were determined. The results showed that KA-PC improved the solubility of KA in both water and -octanol. Several characterisation methods identified KA-PC as an amorphous structure. The rate of scavenging DPPH free radical and ABTS free radical of KA-PC was higher than that of KA. After 15 days of storage, the peroxidation value of the soybean oil of KA-PC was about 17.35 mmol/kg, which was significantly lower than that of the KA group (about 29.70 mmol/kg) The results help to prepare insoluble compounds into phospholipid complex (PC) and expand their application in food preservation.

This study developed medium-chain fatty acid (MCFA)-enriched specialty fats for hand-grasp pancakes through enzymatic interesterification (EIE) using a soybean oil/fully hydrogenated coconut oil/fully hydrogenated palm oil blend (6:1:3 w/w/w) as the substrate. Background: Intravenous lipid emulsions are a key component of parenteral nutrition, and their fatty acid compositions may influence immune responses and clinical outcomes.
Methods: This retrospective cohort study conducted from January 2020 to December 2022 compared clinical outcomes of hospitalized non-critical care patients receiving parenteral nutrition with either mixed oil or soybean oil lipid emulsions for at least 48 h. The primary outcome was a composite of the presence of pneumonia, urinary tract infection, or an intra-abdominal collection diagnosed within 14 days of initiating parenteral nutrition.

Developing amphibious adhesives that combine high adhesion strength with on-demand erasability in both dry and wet environments remains a significant challenge. In this study, biomass-derived, amphibious, and erasable adhesives are fabricated by grafting 3-aminobenzoic acid and 3-aminobenzeneboronic acid onto epoxidized soybean oil (ESO), yielding ESO-Am adhesives. These adhesives are dynamically cross-linked with boroxines, hydrogen bonds, and hydrogen-bonded hydrophobic nanodomains.
