Amyloid fibril formation is a central biochemical process in pathology and physiology. Over decades, substantial advances were made in elucidating the mechanisms of amyloidogenesis, its links to disease, and the production of functional supramolecular structures. While the term "amyloid" denotes starch-like features of these assemblies, no evidence of amyloidogenic behavior of polysaccharides has been so far reported. Here, we investigate the potential of amylum (starch) not only to self-assemble into hierarchical fibrillar structures but also to exhibit canonical amyloidogenic properties. Ordered amylum structures were formed through a sigmoidal growth process with characteristic amyloid features including typical nanofibril morphology, binding to indicative dyes, inherent luminescence, apple-green birefringence upon Congo red staining, and notable mechanical rigidity. These findings shed light on polysaccharide self-assembly and expand the generic amyloid phenomenon.

Dialdehyde polysaccharides (DAPs) were prepared as tanning agents via periodate oxidation, intentionally omitting ethanol precipitation to maintain molecular weight polydispersity, thus optimizing tanning performance. However, the presence of formaldehyde in these DAPs compromised their environmental sustainability. This study systematically explored the impact of polysaccharide structures on formaldehyde formation in DAPs.

Molecular recognition and determination of vascular cell adhesion molecule-1 (VCAM-1), interleukin-6 (IL-6), and natriuretic peptide C-type (NPPC) are essential for the early prognosis and diagnosis of cardiovascular diseases, especially in young obese populations. Highly sensitive and selective devices characterized by low Limits of quantification are required for their determination in whole blood. Therefore, a 3D stochastic sensor was developed by immobilizing a chitosan hydrogel onto a carbon paste electrode (used as the support matrix for the hydrogel), which was subsequently modified with gold nanoparticles, multi-walled carbon nanotubes, and β-cyclodextrin (β-CD/AuNPs@MWCNT/CS/CPE).

In this study, we present an optimized protocol to prepare midazolam (MDZ)/γ-cyclodextrin (γ-CD) inclusion complex-loaded ODFs using the innovative direct powder extrusion 3D printing technique (DPE). Inspired by spider silk, polyphenolic nanodots (PTa) loaded multi-layer MXene (mMXene-PTa) through hydrogen and coordination bonds was prepared by self-polymerizing tannic acid on mMXene and used as a new crosslinker for polyvinyl alcohol (PVA). Together with starch (ST), mMXene-PTa was compounded with PVA and exfoliated to fabricate PVA/ST/mMXene-PTa nanocomposite. The phenolic hydroxyl groups in PTa formed high-density H-bonds with PVA and ST, creating an organic-inorganic dynamic crosslinking network with mMXene-PTa as nodes.
