Article Abstract

, which produces enzymes like amylase and protease as well as flavor substances like β-phenyl ethanol and phenyl acetate, plays a crucial role in traditional fermented foods. However, this strain still lacks a high-density fermentation culture, which has had an impact on the strain's industrial application process. Therefore, this study investigated the optimization of medium ingredients and fermentation conditions for high-density fermentation of Y1402 through single-factor design, Plackett-Burman design, steepest ascent test, and response surface analysis. The study found that glucose at 360.61 g/L, peptone at 50 g/L, yeast extract at 14.65 g/L, KHPO at 5.49 g/L, MgSO at 0.40 g/L, and CuSO at 0.01 g/L were the best medium ingredients for Y1402. Under these conditions, after three days of fermentation, the total colony count reached 1.79 × 10 CFU/mL. The optimal fermentation conditions were determined to be an initial pH of 6.0, an inoculum size of 1.10%, a liquid volume of 12.5 mL/250 mL, a rotation speed of 120 r/min, a fermentation temperature of 21 °C and a fermentation time of 53.50 h. When fermentation was conducted using the optimized medium and conditions, the total colony count achieved a remarkable value of 5.50 × 10 CFU/mL, exhibiting a substantial increase of nearly 31 times the original value in the optimal culture medium. This significant advancement offers valuable insights and a reference for the industrial-scale production of .

Background: Screen time in children and adolescents may be linked to cardiometabolic and cardiovascular risk.

Methods: We analyzed data from >1000 participants in the COPSAC2010 and COPSAC2000 (Copenhagen Prospective Studies on Asthma in Childhood) mother-child 2000 and 2010 cohorts. Discretionary screen time, reported by parents or self, was assessed in relation to a composite cardiometabolic risk score based on scores of waist circumference, systolic blood pressure, high-density lipoprotein cholesterol, triglycerides, and glucose.

Human plasma gelsolin (pGSN) is an 83 kDa actin-binding protein involved in cytoskeletal remodeling, inflammation, and host defense. Its clinical relevance as a biomarker and potential therapeutic agent, particularly in conditions like sepsis, acute respiratory distress syndrome (ARDS), and cystic fibrosis, has driven interest in scalable recombinant expression. However, high-yield production of functionally active gelsolin is hindered by its complex structure and folding requirements.

Background And Aim: Industrial-scale probiotic production requires economically viable media formulations that do not compromise strain functionality. This study aimed to develop a cost-effective medium for cultivating 22F (L22F), a probiotic candidate isolated from swine feces, while evaluating its industrial viability and functional metabolic profile.

Materials And Methods: Carbon (glucose, sucrose, and dextrose) and nitrogen (yeast extract, soy protein isolate, and whey protein concentrate) sources were screened using one-variable-at-a-time and Plackett-Burman design, followed by Response Surface Methodology for optimization.

Nutritional values of some insects are correlated with species, developmental stages, temperature, reproduction, flight, migration, and their diet. Insect oil may be utilized as an ingredient in feed and food, in the cosmetic industry, or as biofuel. Lipid content is composed mainly of fatty acids (FAs) of nutritional importance.

Association between empirically driven dietary patterns and cardiometabolic disease risk factors: a cross-sectional analysis in disease-free adults.

Nutr Metab (Lond)

July 2025

Hugh Sinclair Unit of Human Nutrition, Institute of Food, Nutrition and Health, Department of Food and Nutritional Science, Institute for Cardiovascular and Metabolic Research, University of Reading, Reading, RG6 6DZ, UK.

Background: Although links between dietary patterns (DPs) and cardiometabolic disease (CMD) risk markers have been identified in UK populations, these studies often rely on less quantitative measures of dietary assessment and include only a limited number of risk markers.

Objective: This cross-sectional analysis aimed to identify DP in self-reported disease-free adults using weighed diet diaries and explore relationships with a broad range of CMD risk factors and diet quality.

Methods: Data were collated from five studies conducted in adults living in the UK (2009-2019) and DPs were a posteriori extracted from habitual dietary intake data using principal component analysis.
