The present study aimed to optimize the relative proportion of roasted flax seed flour as dietary fiber ingredient (DFI) and :stevia percent in preparation of balls. Response surface methodology (RSM) was used to determine the optimum DFI proportion and :stevia percent. Thirteen experimental runs were conducted with varying levels of independent variables viz. dietary fiber ingredient (4.0-8.0%) and :stevia :: 1:1 (22.5-27.5%), as generated by central composite design. The responses investigated were pH, cooking yield, water activity (a), Hue angle, Chroma value and sensory attributes of balls. The RSM results showed that the experimental data could be adequately fitted to a second-order polynomial model with a satisfactory Coefficient of determination (R > 50%). The study revealed that the effect of all the factors were significant on the studied responses. The optimum formulation obtained using desirability function was 5.92 and 26.42% for DFI proportion and :stevia respectively. The values of responses at optimum formulation were 6.36 pH, 91.80 cooking yield (%), 0.9481 water activity (a), - 22.62 Hue angle, 8.71 Chroma value, 6.89 sweetness and 7.10 overall acceptability. These predicted values were validated with experimental values and found be not significantly different.

Purpose Of The Review: This review aimed to summarize current evidence on the effectiveness of medical nutrition therapy (MNT) in the management of obesity and endometriosis, with a focus on dietary patterns such as the Mediterranean and Ketogenic diets, as well as nutritional supplementation. Additionally, it highlights the central role of the clinical nutritionist in implementing individualized, evidence-based interventions within multidisciplinary care.
Recent Findings: Although the literature reports the existence of an inverse relationship between risk of endometriosis and body mass index, clinical evidence jointly reports that a condition of obesity is associated with greater disease severity.

Introduction: Obesity remains a critical global health challenge, intricately linked to poor dietary quality, gut microbiota dysbiosis, and mitochondrial dysfunction.
Purpose: This study aimed to investigate the comparative effects of brown rice, meal replacements, and thiazolidinediones on mitochondrial abundance and gut microbiota composition in a rat model of diet-induced obesity.
Methods And Materials: A total of twenty male Sprague Dawley rats were randomly assigned to five groups: control, high-fat high-fructose diet, and three intervention groups receiving the same obesogenic diet supplemented with brown rice, meal replacement, or thiazolidinediones for twelve weeks.
Japonica is considered one of the better tasting varieties, so it is important to balance the quality and taste of japonica rice produced by moderate processing. This study analyzed the changes in bioactive components, heavy metal elements, and sensory quality of northern japonica rice after gradient milling, and constructed a comprehensive quality evaluation model for japonica rice with different degrees of milling. Abstract: This study aimed to evaluate the physicochemical properties of fruit waste flour (FWF) composed of pineapple, acerola, and passion fruit (adapted from the Brazilian Amazon) and its impact on the physicochemical and sensory attributes of edible ice cream. FWF was measured for parameters of the proximate composition, total fibers, total phenolic content, and antioxidant capacity. Three formulations of sorbet-type edible ice cream were developed: one addition with FWF (AFWF), one without FWF (WFWF), and a commercial standard (CS) sample; these were characterized based on the proximate composition, total fibers, pH, total acidity, water activity, instrumental color, and sensory acceptance (flavor, texture, and overall appearance).
