Current tools for predicting the thrombolysis risk in patients after stroke exhibit limited event prediction in early post-thrombolysis hemorrhagic events. This study analyzes baseline, low-efficiency, and high-efficiency scenarios to represent potential decarbonization pathways in China up to 2060, aiming to estimate the range of electricity prices for each province. Single-material systems high-moisture extrudates have limitations regarding texture and digestibility; however, biphasic material systems can effectively regulate and improve the properties of the extrudates. This study subjected soy protein isolate (SPI) and gellan gum (GG) mixtures with varying mass ratios to high-moisture extrusion (HME), systematically characterizing the morphology, texture, structural characteristics, rheological behavior, digestive properties, and moisture properties of the extrudates. This study prepared emulsion gels by modifying ovalbumin (OVA)-flaxseed oil (FSO) emulsions with transglutaminase (TGase) and investigated their properties, structure and oxidative stability under different enzyme reaction times. Here, we found prolonged reaction times led to the transformation of α-helix and β-turn into β-sheet and random coil. The elasticity, hardness and water retention of the emulsion gels increased significantly, but the water-holding capacity decreased when the reaction time exceeded 4 h.
