Article Abstract

The effects of freeze-drying and spray-drying on odorants and precursors in Spirulina platensis (Sp) cultivated in different environments (gj: glass jar; rp: raceway pond; cp: circular pond) were investigated. Ninety-four odorants were identified, and hexanal, (Z)-4-decenal, (E, E)-2,4-decadienal, β-cyclocitral, β-ionone, dimethyl trisulfide exhibited higher flavor dilution factors (≥ 81). Spray-drying increased pyrazines and terpenoids formation, enhancing roasted and seaweed-like odors, whereas freeze-drying retained higher levels of aldehydes and acids, causing fishy and rancid odors. Freeze-dried Sp-gj was enriched in dimethyl sulfur, whereas spray-dried Sp-gj, Sp-rp, and Sp-cp were enriched in dimethyl trisulfide, emphasizing the influence of cultivar and drying on sulfide formation. Spray-drying converted β-carotene into β-cyclocitral and β-ionone and methionine into methional and dimethyl trisulfide, elucidating the mechanisms responsible for seaweed-like and fishy odors for Sp. These findings underscore the critical role of cultivar and drying in modulating S. platensis odor, providing valuable insights for optimizing its sensory attributes.

Minglv-flavor (MLF) Baijiu, brewed with mung beans, exhibits a characteristic aroma profile. However, key aroma compounds and dynamic evolution during aging have not been systematically investigated. Through recombination and omission experiments, 21 key aroma compounds were confirmed, including ethyl hexanoate, ethyl butyrate, ethyl pentanoate, ethyl octanoate, ethyl 3-methylbutanoate, ethyl 2-methylpropanoate, ethyl 2-methylbutanoate, hexanoic acid and pentanoic acid, which synergistically constituted the aroma profile of MLF Baijiu, characterized by a prominent mung bean aroma accompanied by harmonious fruity and floral notes.

This work investigated the covalent interaction mechanisms between eight aroma compounds from heat-processed pork and porcine proteins. The effects of aroma compounds on protein conformation and covalent reactive groups were evaluated before and after heating, demonstrating that covalent binding potential for hexanal, (E)-2-octenal (OCT), (E,E)-2,4-decadienal (DEC), dimethyl trisulfide (DMTS), and 2-methyl-3-furanthiol (MFT). Covalent binding of OCT, DEC, DMTS, and MFT, along with hydrophobic interactions of OCT and DEC, disrupted protein secondary structure and inhibited peptide chain cross-linking, with heating enhancing interactions.

The ubiquitous presence of algal-derived odors in large lakes and reservoirs constitutes a critical environmental concern. Particularly during the high-temperature summer months, localized regions of Qiandaohu Reservoir have exhibited markedly elevated concentrations of odor compounds. Volatile sulfur compounds are recognized as primary contributors to the off-flavors in many heat-sterilized juices, affecting their commercial appeal. The influence of three muskmelon pectin fractions on the formation of volatile sulfur compounds via the Methionine-sugars Maillard reaction was investigated. Kinetic analysis demonstrated that the formation of methanthiol, dimethyl disulfide, dimethyl trisulfide, and methional conforms to a zero-order reaction.
