The present study investigated the impact of Ca regulated sodium alginate gelation on buckwheat noodle digestion, as well as its physiological and biochemical effects on rat. An endogenous method was employed for noodle preparation, and the rate of starch hydrolysis was evaluated. Buckwheat noodles prepared using this approach exhibited significantly reduced rates of starch digestion compared to conventional methods. Increased concentrations of sodium alginate and Ca led to the formation of dense gel networks that promoted weight gain in diabetic rats while simultaneously lowering postprandial blood glucose levels and improving glucose intolerance and abnormal insulin tolerance. Moreover, these gel networks enhanced liver glycogen synthesis by increasing SOD and CAT activities while reducing the levels of ALT and MDA, thereby mitigating morphological damage in the liver. Buckwheat noodles prepared using this endogenous method were found to potentially exhibit hypoglycemic effects and mitigate complications associated with type 2 diabetes.

This study presents a straightforward and rapid method for preparing graphene aerogel by integrating a sodium alginate (SA)-metal ion crosslinking system, a bubble template, and an osmotic dehydration process. Graphene oxide (GO) nanosheets were dispersed into the solution crosslinked by SA and metal ions, leading to rapid gelation of GO under ambient conditions. To minimize structural damage to the porous network caused by water molecules during the drying process, an osmotic dehydration technique was employed as an auxiliary drying method.

At present, flexible sensors are a hot spot in research and experimental development, but the research on flexible sensors that can be used for human motion monitoring still needs to be deepened. In this work, the green material cellulose acetate (CA) was used as the matrix material, the film was made by electrospinning, crushed by a cell grinder and sodium alginate (SA) was added to promote the uniform dispersion of nanofibers in water, and then methyltrimethoxysilane (MTMS) and MXene nanosheet dispersion were added to make it hydrophobic and good conductivity, and the aerogel precursor solution was prepared, and then the CA/SA/MTMS/MXene aerogel with directional holes was prepared by directional freeze-drying. As a flexible sensor material, it can be used for human wear, monitoring the electrical signals generated by the movement of human joints and other parts, and can still maintain a current of about 0.

Bioprotective LAB3 cells that produce bacteriocin-like substances were entrapped in 4% (w/w) sodium alginate matrices, either with or without 10% (w/w) sodium caseinate. The effects of bead formulation-alginate alone or combined with caseinate, with or without the addition of 20% (w/w) MRS broth or M17 broth-on the culturability of LAB3 cells within the beads and their anti activity were assessed over 12 days of storage at 30 °C in closed bottles. Calcium-alginate-caseinate beads supplemented with MRS broth proved most effective in preserving both culturability and anti- activity.
