This study developed a soy protein isolate (SPI)-based composite gel system, incorporating oxidized chitin nanowhiskers, konjac glucomannan, and corn oil, functionally mimics porcine back fat in emulsified sausages formulations. Through systematic evaluation of SPI-based composite gel substitution levels (0, 50, 75, and 100 %) on quality parameters, we demonstrated that this biomimetic system significantly enhanced moisture content, protein levels, pH, L* and a*, while reducing total fat, calories, cooking loss, and lipid oxidation. At the optimal 75 % substitution ratio, microstructural analyses revealed a compact and uniform gel network structure.

To improve the gelling properties of konjac glucomannan/curdlan (KGM/CUD) composite hydrogels, KGM/CUD composite hydrogels were treated by freeze-thawing. Herein, we focus on the effects of freeze-thaw cycles, freezing temperature, and freezing time on the structural and mechanical properties of KGM/CUD composite hydrogels. SEM and SAXS results showed that ice crystals generated by freezing extruded the molecular chains and increased the cross-linking density between molecular chains, which resulted in a denser gel microstructure.

In this study, a series of novel nanofibers based on gelatin (GA) loading with purple potato anthocyanin (PPA) and syringic acid (SA) were obtained by electrospinning technology. The effects of SA on mechanical properties, thermal stability, antioxidant capacity, and antimicrobial activity of the GA/PPA nanofibers were systematically characterized. The ovary ages earlier than most other tissues, yet the underlying mechanisms remain elusive. Here a comprehensive analysis of transcriptomic landscapes in different organs in young and middle-aged mice revealed that the ovaries showed earlier expression of age-associated genes, identifying increased NADase CD38 expression and decreased NAD levels in the ovary of middle-aged mice. Bulk and single-cell RNA sequencing revealed that CD38 deletion mitigated ovarian aging, preserving fertility and follicle reserve in aged mice by countering age-related gene expression changes and intercellular communication alterations.
