The present study used descriptive sensory analysis (DSA) to compare Pizza cheeses prepared from various combinations of fresh Mozzarella and semi-ripened Cheddar cheeses and cooked under conventional and microwave cooking methods. A cheese sensory lexicon was developed, and descriptive sensory profiles of the Pizza cheeses were evaluated using a panel of semi-trained judges ( = 12). The following characteristics, flavor (cheddar, acidic, rancid, bitter, salty, creamy, and moldy), texture (stringiness, stretchability, firmness, and tooth pull), and appearance (meltability, oiliness, edge browning, and surface rupture) of Pizza cheeses were analyzed and compared with control samples.

Background: Chitinase 3-like 1 (CHI3L1), chitinase 3-like 2 (CHI3L2), and neuronal pentraxin II (NPTX2) are inflammatory biomarkers of Alzheimer's disease (AD). Although studies have demonstrated that cerebrospinal fluid levels of these proteins are changed in AD, no studies have undertaken a detailed examination of alterations in protein levels, cellular expression, and interaction with amyloid in the brain during the progression of AD.

Methods: The study evaluated levels of both CHI3L1 and CHI3L2, NPTX2, ionized calcium-binding adapter molecule 1 (Iba1), complement component 1q (C1q), glial fibrillary acidic protein (GFAP), and CD44, in the frontal cortex of people who died with an antemortem clinical diagnosis of no cognitive impairment (NCI), mild cognitive impairment (MCI), mild/moderate AD (mAD), and severe AD (sAD) using immunoblot and immunohistochemical techniques.

Herein, a deterministic solvothermal strategy was employed to synthesize an efficient anticancer agent '-dichlorobis(1,10-phenanthroline)manganese(II)' (Mn(phen)Cl). A single-crystal X-ray diffraction analysis revealed that Mn(phen)Cl crystallizes in a triclinic system with the space group . Cyclic voltammetric studies of Mn(phen)Cl indicated that the electrode process occurs only due to complex formation and has a diffusion-controlled mechanism.

Graph theoretical concepts are broadly used in several fields to examine and model various applications. In computational chemistry, the characteristics of a molecular compound can be assessed with the help of a numerical value, known as a topological index. Topological indices are extensively used to study the molecular mechanics in QSAR and QSPR modeling.

In this study, three batches of nano-titania functionalized covalent organic frameworks were acquired depending on different solvothermal reaction stages (24 h, 48 h and 72 h), which were named as single roll-up shaped nano-titania functionalized COFs (SSTF-COFs), double roll-up shaped nano-titania functionalized COFs (DSTF-COFs) and clover-shaped nano-titania functionalized covalent organic framework (CSTF-COFs), respectively. After comparing their extraction performances, the more efficient and stable CSTF-COFs were selected as sorbent for the dispersive solid phase extraction (dSPE) of eight target N-nitrosamines in drinking water, followed by the determination with liquid chromatography-tandem quadrupole mass spectrometry (LC-MS/MS). Owing to the introduction of hydroxy groups, CSTF-COFs showed high extraction efficiency for N-nitrosamines with a wide range of polarities through hydrogen bonding interaction, hydrophobic interaction and hydrophilic interaction.

Nanopriming has been shown to significantly improve seed germination and seedling vigor in several agricultural crops. However, this approach has not been applied to native upland boreal forest species with complex seed dormancy to improve propagation. Herein, we demonstrate the effectiveness of carbon nanoparticles functionalized with carboxylic acids in resolving seed dormancy and improved the propagation of two native upland boreal forest species.

Background: Ω-3 fatty acids perform several therapeutic functions in the body, however, their applications are limited due to the inferior oxidative stability. To improve the oxidative stability and release properties of Ω-3 fatty acids, microencapsulation is performed. Butter is a good source of fat-soluble vitamins and antioxidant systems however, it is not a good source of Ω-3 fatty acids.

The aim of the current study was to evaluate the effect of apple peel polyphenol extract (APPE) on the physicochemical and microbiological properties of probiotic yoghurt. Five concentrations of APPE were added in probiotic yoghurt as: (1) CTL, control without APPE; (2) AE1, addition of 1% APPE; (3) AE2, addition of 2% APPE; (4) AE3, addition of 3% APPE; (5) AE4, addition of 4% APPE; and (6) AE5, addition of 5% APPE. The prepared probiotic yoghurt was stored at 4 °C for 21 days and analyzed for physicochemical and microbiological properties.

Antioxidants play an important role in animal and plant life owing to their involvement in complex metabolic and signaling mechanisms, hence uncovering the genetic basis associated with antioxidant activity is very important for the development of improved varieties. Here, a total of 182 common bean () landraces and six commercial cultivars collected from 19 provinces of Turkey were evaluated for seed antioxidant activity under four environments and two locations. Antioxidant activity was measured using ABTS radical scavenging capacity and mean antioxidant activity in common bean landraces was 20.

Here, we present the fabrication of a reduced graphene oxide-supported PdCa (PdCa/rGO) alloyed catalyst via a NaBH reduction method for direct alcohol fuel cells in basic medium and direct formic acid fuel cells in acidic medium. Powder X-ray diffraction, energy-dispersive X-ray spectroscopy, scanning electron microscopy, transmission electron microscopy, high-resolution transmission electron microscopy, X-ray photoelectron spectroscopy, Brunauer-Emmett-Teller, inductively coupled plasma mass spectrometry, and Raman spectroscopy are used to characterize the PdCa/rGO catalyst. We proved that the calcium oxide significantly enhances the electrocatalytic methanol, ethanol, and formic acid oxidation over the Pd/rGO surface.

Article Synopsis
  • - Grilling enhances the flavor, digestibility, preservation, and nutritional value of meat, but it can also produce harmful compounds called heterocyclic amines (HCAs), which are linked to an increased cancer risk.
  • - HCAs form during specific cooking conditions and are carcinogenic, prompting a need for better detection methods to measure these compounds in food.
  • - A new method for extracting and analyzing HCAs using pressurized accelerated solvent extraction and ultra-high performance liquid chromatography is fast, accurate, and does not require extensive sample preparation, making it ideal for routine analysis.

Intimate partner violence (IPV) is a public health and human rights issue with the social and economic impacts felt by women. Punjab is a male-dominated society, where partner violence is generally accepted as a cultural norm and viewed as normal behavior within a marriage. It stems from attitudes that partner violence is a private matter and usually a justifiable response to misbehavior on the part of the wife.
