Article Abstract

poses significant challenges in the food industry due to its resistance in harsh environments and its ability to form biofilms. Endolysins represent a promising solution for controlling in the food industry, with potential applications during both production and storage. This review discusses various endolysins that effectively inhibit , emphasizing their optimal conditions and potential uses in food products. When used in combination with current methods such as nisin or high hydrostatic pressure, endolysins enhance food safety by providing synergistic antimicrobial effects. Additionally, cell binding domain enabled specific and rapid detection, expanding diagnostic applications through fluorescence tagging and biosensor integration. Advances in engineering endolysins have further improved their lytic efficiency and specificity, making them adaptable to diverse food safety challenges.

Entomopathogenic nematode symbiotic bacteria (EPNB) enhance nematode insecticidal capacity through symbiosis. This study cloned the complete 32-kb type III secretion system (T3SS) gene cluster from TT01 using Red/ET recombineering and functionally expressed it in T3SS-deficient HN_xs01. Heterologous T3SS expression significantly enhanced HN_xs01 adhesion and invasion capabilities in CF-203 cells.

Pea shoots (Pisum sativum) are well known to have nutritional benefits when consumed raw; however, the effects of home cooking on their bioactive compounds remain unclear. Therefore, we investigated how different cooking methods affect the antioxidant activity and stability of antioxidants. Our evaluation revealed that antioxidant activity is preserved by steaming but significantly reduced by microwaving and boiling, which also causes weight loss during cooking.
