This study presents a biopreservation method using sourdough co-fermented with Fructilactobacillus sanfranciscensis and Propionibacterium freudenreichii, optimizing conditions to 220 hydration and 24 h fermentation. The composite sourdough bread quality was evaluated through physicochemical, storage, sensory, and microbial tests, with mechanisms analyzed based on microstructure, rheology, and dough structure. Results showed that: first, the composite sourdough enhanced bread physicochemical properties, increasing volume, height-to-diameter ratio, elasticity, and resilience, while reducing baking loss, hardness, chewiness, and adhesiveness.

There is a growing body of evidence that the interaction between various microbial organisms and the human host can affect various physical and even mental health conditions. Bidirectional communication occurs between the brain and the gut microbiome, referred to as the brain-gut-microbiome axis. During aging, changes occur to the gut microbiome due to various events and factors such as the mode of delivery at birth, exposure to medications (e.

As a dietary supplement for humans and animals, Astaxanthin (Ax) is widely believed to possess antioxidant and anti-inflammatory properties. In this study, we attempted to evaluate the protective effects of Ax on dextran sodium sulfate (DSS)-induced colitis in mice and the underlying molecular mechanism. Our results suggested that Ax significantly reduced the severity of DSS-induced colitis in mice, as evidenced by increased colon length, decreased disease activity index (DAI), and attenuated inflammatory factors.

Pesticide use has become widespread around the globe, and mounting evidence has demonstrated health impacts on non-target insects such as bees. However, less is known about whether the presence of these chemicals in plant tissue can alter interactions between plants, pollinators, and floral microbes. Here we asked if the presence of an insecticide and fungicide alters pollinator visitation, the abundance of floral fungi, and seed set.

Microbes must rapidly adapt to environmental stresses, including toxic heavy metals like copper, by sensing and mitigating their harmful effects. Here, we demonstrate that the phase separation properties of bacterial ribonucleoprotein bodies (BR-bodies) enhance Caulobacter crescentus fitness under copper stress. To uncover the underlying mechanism, we identified two key interactions between copper and the central scaffold of BR-bodies, RNase E.
