Given rising traders and consumers concerns, the global food industry is increasingly demanding authentic and traceable products. Consequently, there is a heightened focus on verifying geographical authenticity as food quality assurance. In this work, we assessed pattern recognition approaches based on elemental predictors to discern the provenance of mandarin juices from three distinct citrus-producing zones located in the Northeast region of Argentina. A total of 202 samples originating from two cultivars were prepared through microwave-assisted acid digestion and analyzed by microwave plasma atomic emission spectroscopy (MP-AES). Later, we applied linear discriminant analysis (LDA), k-nearest neighbor (k-NN), support vector machine (SVM), and random forest (RF) to the element data obtained. SVM accomplished the best classification performance with a 95.1% success rate, for which it was selected for citrus samples authentication. The proposed method highlights the capability of mineral profiles in accurately identifying the genuine origin of mandarin juices. By implementing this model in the food supply chain, it can prevent mislabeling fraud, thereby contributing to consumer protection.

In this study, the effects of high hydrostatic pressure (HHP)-mediated alterations in matrix composition on the bioaccessibility of carotenoids in satsuma mandarin juice were assessed. Results showed that the total carotenoid content increased significantly under HHP treatment (300-600 MPa), and the total carotenoids bioaccessibility was optimal at 600 MPa/1 min. The bioaccessibility of carotenoids in satsuma mandarin juice was positively correlated with the contents of titratable acids, total phenols and total sugars, all of which increased significantly after HHP.

The presence of insoluble pulp particles influences flavor release and aroma characteristics in citrus juice. The Panel on Climate Change has predicted an intensification of drought and heat waves. The aim of this study was to determine the physiological response of mandarin trees in a semi-arid area to the effects of a long period of irrigation with saline reclaimed water (RW) and freshwater (FW) in terms of leaf mineral constitution, free amino acids and phytohormone balance, and their influence on yield and fruit quality. Results showed that higher foliar levels of Cl B, Li, and Br were found in the RW treatment.

Bitterness and off-flavors are problematic in some citrus genotypes, particularly hybrids with in their pedigrees that have shown tolerance to the devastating citrus greening disease. Comprehensive chemical profiling combined with sensory analysis of bitterness were used to determine bitter compounds in citrus juice. A selection of genotypes including orange, grapefruit, pummelo, tangelo, mandarin hybrids with and without in their pedigrees, as well as pure were analyzed due to their broad range in bitterness intensity.
