Houhuo Daqu (HHD) exhibits significant heterogeneity between its core and peel layers, yet their differences remain underexplored. This study integrates metagenomic sequencing and electronic sensory technologies to compare the physicochemical properties, microbial communities, and flavor profiles of HHD's core and peel. Results reveal distinct microbial communities and diversity between the layers.

Fermented foods are valued for their diverse flavor and health benefits, but the formation of ethyl carbamate (EC), a potential carcinogen, during production and storage poses challenges. Current EC reduction methods often compromise flavor and bioactive components. This study exemplifies a novel adsorbent combining activated carbon with metal-organic framework (MOF) chemistry for semi-selective EC removal.

Chronic liver disease (CLD) is a leading cause of global morbidity and mortality, necessitating effective preventive strategies. Growing evidence is linking coffee consumption with reduced risk of disease progression in various CLDs, including metabolic dysfunction associated steatotic liver disease (MASLD), alcoholic liver disease, hepatitis B and C, autoimmune hepatitis, and a reduction in the risk of hepatocellular carcinoma development. Coffee, a globally consumed beverage, contains bioactive compounds like caffeine, chlorogenic acids, diterpenes, and polyphenols, which may offer hepatoprotective benefits through anti-inflammatory, antioxidant, and metabolic regulatory effects.
