Cakes are the most popular bakery items around the world because they are easy to consume and affordable. Their baking characteristics and consumers' healthy habits have driven the adoption of new ingredients and technologies to improve their functionality. This study aimed to develop cakes in which wheat flour was replaced by different amounts of defatted rice bran and to evaluate their physicochemical composition, nutritional and technological properties, and sensory profile. The use of defatted rice bran in cakes promoted an increase in fiber content, phenolic compounds and antioxidant capacity, besides decreasing their energy value. The formulation with 30% defatted rice bran exhibited high acceptance and 35% of the judges declared that they would consume the product at least once a week, if it could be found on the market. Results showed that defatted rice bran is a potential raw material that could be used in bakery products, as a cheap way to improve their nutritional quality without affecting consumer acceptability.

Green solvents offer promising alternatives to n-hexane for sustainable vegetable oil extraction. Defatted rice bran (DRB), a by-product of Thai , is rich in dietary fiber and antioxidant phytochemicals. This study investigated the bioaccessibility, antioxidative efficacy, and prebiotic potential of DRB in colorectal cancer (CRC) models. Simulated gastrointestinal digestion demonstrated high bioaccessibility of flavonoids (79%) and phenolics (62%), along with substantial antioxidant activity: DPPH (57%), FRAP (83%), and ORAC (74%).

Colorectal cancer (CRC) remains a leading cause of cancer-related mortality worldwide, with treatment complicated by drug resistance, metastasis, and tumor heterogeneity. In recent years, with deeper insights into tumor biology, various novel targeting mechanisms have been discovered and garnered increasing attention. Among these mechanisms, metabolic reprogramming, cell death mechanisms, and signaling pathways are particularly critical, as they not only govern fundamental biological processes of CRC but also offer a wealth of clinically actionable targets.

Defatted rice bran (DRB) causes a dermatitis in cattle that affects mainly the distal hindlimbs. Outbreaks of poisoning by DRB have been reported in both dairy and beef cattle in Brazil and Uruguay, with morbidity varying from 10 % to 100 %. The objectives of this study were: (1) to reproduce DRB poisoning by determining the maximum dose that can be fed safely without compromising animal welfare; (2) to carry out a retrospective study of the outbreaks diagnosed by the Regional Diagnostic Laboratory of the Veterinary School, Federal University of Pelotas; and (3) to study the epidemiology and pathogenesis of the disease.
