Article Abstract

The storage of anaerobic ammonia oxidizing bacteria (anammox) plays an important role in the application of anammox. Glycerol, sodium alginate and DMSO were used as the cryoprotectant, and vacuum lyophilization was used to prepare the anammox bacteria powder. Simultaneously, the control experiment was set up with the same protectant and preservation time. Bacteria powders were preserved using vacuum lyophilization and preserved at 4 °C for 60 days. During the 54 days of rejuvenation, the reactors that were inoculated with bacteria powder preserved by different methods showed significant difference. The results show that the anammox bacteria powder with 3 wt% DMSO as the cryoprotectant and without the substrate solution presented the best rejuvenation effect. The average specific anammox activity was 115.84 mg-N·(g VSS·d) with an activity recovery rate of 89%, and its stoichiometric ratio (Rs and Rp) was 1.33 and 0.21, which were very close to the theoretical values. The vacuum lyophilization method for the long-term preservation of anammox bacteria was effective.

Key Laboratory of Processing and Quality Safety Control of Characteristic Agricultural Products, Ministry of Agriculture and Rural Affairs (Jointly built by Ministry and Province), School of Food Science and Technology, Shihezi University, Shihezi, Xinjiang 832000, China.

This study aimed to explore the impact of different harvest maturity stages (white, semi-ripe, and fully ripe) and various drying methods [freeze drying (FD), freeze drying followed by heat pump drying, and FD followed by far-infrared drying (FD-FID)] on the quality and aroma profile of gray jujube powder. The results demonstrated that both the harvest maturity stage and drying methods significantly ( < 0.05) influenced the physical properties, chemical composition, and aroma profile of gray jujube powder.

leaves and extracts need to be promptly dried after harvest to prevent microbial activity and preserve their bioactive compounds, including glycosides, flavonoids, and essential oils. Effective drying also reduces moisture and volume, which lowers packaging, storage, and transportation costs. Therefore, innovative drying methods are necessary to maintain stevia's physicochemical, sensory, and nutritional properties for functional food formulations.

MOE Key Laboratory of Groundwater Quality and Health, School of Environmental Studies, China University of Geosciences, Wuhan 430074, China.

The drying treatment of dissolved organic matter (DOM) eluate was often used to prepare DOM solutions for chemodiversity analysis using Fourier transform ion cyclotron resonance mass spectrometry. However, the effects of drying treatment on the chemodiversity of DOM have not been thoroughly investigated. In this study, vacuum freeze-drying and vacuum centrifuge drying resulted in approximately half and 10% loss of DOM mass loss, respectively.

Resistant starch microparticles (RSP) are gaining popularity in functional foods, and optimizing spray drying (SD) conditions is essential to enhance their properties. This study compares SD, vacuum freeze drying (VFD) and oven drying (OD) to investigate their impact on the morphology, quality, and digestibility of RSP. SD at 150 °C (SD-150) resulted in a uniform, non-agglomerated structure, with minimal particle clustering.

Effects of drying techniques on cowpea albumin as an egg replacement for meringue cookie applications.

Department of Food and Nutrition, Duksung Women's University, 33 Samyang-ro 144-gil, Dobonggu, Seoul 01369, Republic of Korea.

In this study, we evaluated the effects of freeze-drying, spray-drying, and vacuum-drying on upcycled cowpea albumin powder and its functional performance in meringue cookie applications. Freeze-drying most effectively preserved protein structure and functionality, resulting in cookies with well-defined air cells, superior texture, and minimal color change. Conversely, spray-drying led to extensive protein denaturation and aggregation due to rapid thermal exposure, which compromised air incorporation and foam stability.
