Starch-quercetin films characterize an innovative approach in the development of functional packaging solutions with sustainable and biodegradable characteristics in materials used in food industry. The quercetin bioactive attributes induced in the starch polymers exhibit incredible antioxidant, antimicrobial as well and mechanical and barrier properties. The free radical-scavenging activity offered by quercetin protects the packaged food from oxidative rancidity, while its antimicrobial properties help control foodborne pathogens, thereby extending the shelf life of perishable products.

This study addresses the product-process characterization of refractance window drying of ripened papaya, considering the abundant availability and underutilization of the perishable product. A statistical design approach with varied drying temperature, time and sample thickness has been adopted to characterize moisture content, total phenolic content, total flavonoid content, vitamin C, and 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging activity. The model fitting, analysis of variance, and numerical optimization showed that the quadratic model was the most suitable model for the response variables.

In the present study, ultrasound assisted extraction (UAE) of phytochemicals from persimmon fruit peel (PFP) was modeled using an artificial neural network (ANN) and optimized by integrating with genetic algorithm (GA). An indirect-type forced convection solar dryer implementing a phase-changing material (PCM) as the energy-storing medium was designed, fabricated, and investigated in this study. The effects of changing the mass flow rate on the valuable energy and thermal efficiencies were studied. The experimental results showed that the instantaneous and daily efficiencies of the indirect solar dryer (ISD) increased with the initial increase in mass flow rate, beyond which the change is not prominent both with and without using the PCM.
