This work evaluated the addition of the polyphenol-rich bioactive extract "e-Vitis", derived from grape marc (the main by-product of the wine industry), into swine feed. This was performed with the aim of testing the in vivo bioavailability of functional compounds, mainly phenolics, through the digestive system and excreta, together with the detection of bioconversion products associated with gut microbiota improvements. Additionally, the palatability of e-Vitis feed was evaluated, as well as the absence of metabolites that could compromise its innocuity.

Natural extracts containing high polyphenolic concentrations may act as good antimicrobials for their antibacterial and antibiofilm activity. The present research characterizes two hydro-organic extracts with high polyphenolic content, obtained from the shrub as antipathogenic candidates. As a result of their own composition, both extracts, LE050 and PG050, have shown pronounced bioactivities with potential uses, especially in agricultural, livestock production, food manufacturing, and pharmaceutical industries.

This work proposes the application of astaxanthin-rich wet paste (HPW) as a partial substitute for wheat flour in the preparation of filloas, a dish that combines the basic ingredients of industrial bakery. The nutritional and color profile of HPW-enriched samples was evaluated by comparative analysis with a mixture of synthetic food dyes. The highest content of carotenoids (798 ± 12 μg g) and fatty acids (76 ± 2 mg g) was obtained for a filloa fortified with in contrast to a non-significant dye response.
