The increasing scarcity of traditional nectar sources due to climate change has led beekeepers to explore alternative floral sources. This study investigates the volatile profile, sensory characteristics, and consumer acceptability of monofloral honey derived from L., a drought-resistant Mediterranean plant. Honey samples produced by ssp. on Aeolian Islands (Sicily, Italy) were analyzed. Volatile organic compounds (VOCs) were extracted using headspace solid-phase microextraction (HS-SPME) and identified by gas chromatography-mass spectrometry (GC-MS), revealing 59 compounds, with dimethyl sulfide being the predominant one. Sensory evaluation using quantitative descriptive analysis (QDA) and Time Intensity (TI) analysis identified distinctive descriptors such as sweet-caramel, cabbage/cauliflower, and pungent notes. Statistical analyses confirmed correlations between specific VOCs and sensory perceptions. A consumer acceptability test involving 80 participants showed lower preference scores for caper honey in terms of aroma and overall acceptability compared to commercial multifloral honey, with differences observed across age groups. The unique aromatic profile and consumer feedback suggest that caper honey has strong potential as a niche, high-quality product, particularly within the context of climate-resilient beekeeping, offering valuable opportunities for innovation and diversification in sustainable apiculture.

Introduction: Current diets which are commonly high in meat and ultra-processed foods are unhealthy and unsustainable and contribute significantly to climate change, environmental degradation and poor health outcomes. Transitioning to healthy and sustainable diets that are rich in plant-based foods and low in animal products could reduce environmental impacts and improve population health. Young Australian adults are a critical target group for dietary intervention as they are motivated towards climate action and have the lowest diet quality out of all adult age groups.

Wheat is the most cultivated crop worldwide, and Australia consistently ranks among the top wheat-exporting countries. Although modern technology has expanded the speed and accuracy of conventional breeding, progress is constrained by limited genetic diversity and linkage drag, with new wheat varieties often taking 8-12 years to reach the market. Biotech methods involving the transformation of foreign DNA into genomes [genetic modification (GM)], or editing of native DNA [genome editing (GEd)], provide novel opportunities to efficiently improve traits alongside conventional breeding.

Background & Aims: Sucralose consumption has been associated with a reduction in insulin sensitivity, potentially through changes in gut microbiota, induction of low-grade inflammation and other pathophysiologic mechanisms, thus the aim of this study was to evaluate the effect of sucralose consumption on glucose tolerance, insulin sensitivity, postprandial glucagon-like peptide 1 (GLP-1), gut microbiota composition, Curli protein, and related metabolites.
Methods: Randomized placebo-controlled triple blind trial including healthy lean individuals assigned to consume 30% of the sucralose acceptable daily intake or placebo for 30 days. A mixed meal tolerance test (MMTT) was performed before and after intervention to evaluate the postprandial changes in the main outcomes.
