Hen egg-white lysozyme (HEWL) is a widely used model protein in crystallographic studies and its enzymatic mechanism has been extensively investigated for decades. Despite this, the interaction between the reaction intermediate and the catalytic Asp52, as well as the orientation of Asn44 and Asn46 side chains, remain ambiguous. Here, we report the crystal structures of perdeuterated HEWL and DO buffer-exchanged HEWL from 0.91 and 1.1 Å resolution neutron diffraction data, respectively. These structures were obtained at room temperature and acidic pH, representing the active state of the enzyme. The unambiguous assignment of hydrogen positions based on the neutron scattering length density maps elucidates the roles of Asn44, Asn46, Asn59, and nearby water molecules in the stabilization of Asp52. Additionally, the identification of hydrogen positions reveals unique details of lysozyme's folding, hydrogen (H)/deuterium (D) exchange, and side chain disorder.

Laying hens possess a calcium-specific appetite that intensifies towards lights out to meet the high demands for eggshell formation and skeletal maintenance. Pecking blocks (PBs) are edible enrichments that can serve as an additional calcium source. We explored the relationships between PB preference (PBp), PB use, keel fracture status (KS), and eggshell quality.

Eggs are a globally important food source and integral to optimal poultry production. Understanding the microbial ecology of the hen reproductive tract is essential for improving both food safety and reproductive efficiency. While the oviduct has been shown to harbor a continuous microbial community, this study is the first to demonstrate the presence of microbiota on the hen ovary surface, suggesting that the ovary is an extension of the oviductal microbial continuum.

Reaction between 2-(pyridin-2-yl)quinoxaline (L) and [MnBr(CO)] afforded a dark-stable -[MnBr(CO)L] that releases CO upon exposure to visible light (468-525 nm). Different structural elucidation methods, including X-ray crystallography, were used to thoroughly characterize the structure of the organometallic compound. Prior to recording the profiles of dark-stability and photolysis in various organic solvents, the complex's solvatochromism features were examined experimentally and through quantum chemical calculations.

Polyvinyl chloride (PVC) nanoplastics (NPs) exposure in humans is neurotoxic. To underscore the possible mechanisms by which PVC NPs provoke neurotoxic outcomes, we have explored the interfacial interactions between PVC NPs and biological assemblies. Our results reveal that exposure to PVC NPs induces dose-dependent alterations in the spectroscopic signatures (UV-vis, fluorescence, and IR) of the model globular protein β-lactoglobulin (BLG).
