In this study, the fermentation characteristics and functional properties of lactic acid bacteria-malted vinegar (LAB-MV) were investigated during the fermentation period. Changes in the components (organic acids, free sugars, free amino acids, β-glucan, and gamma-aminobutyric acid (GABA)) of MV (BWAF0d, BWAF10d, BWAF20d) and LAB-MV (LBWAF0d, LBWAF10d, LBWAF20d) were analyzed according to the fermentation time. The amounts of β-glucan and GABA in LBWAF20d were greater than those in BWAF20d (122.00 μg/mL, 83.06 μg/mL and 531.00 μg/mL, 181.31 μg/mL, respectively). The ACE1 and HMG-CoA reductase inhibitory activities of LBWAF20d were 98.16% (1/20 dilution factor, DF) and 91.01% (1/25 DF), respectively. The lipid accumulation ratio and total cholesterol levels in HepG2 cells treated with LBWAF20d (1/200 DF) were reduced by 45.85% and 54.48%, respectively, compared to those in the untreated group. These results suggest that LAB-MV, which comprises barley wine manufactured from LAB and yeast, may improve hepatic lipid metabolism.

A comprehensive genomic analysis was performed to elucidate the genetic basis underlying its probiotic potential. Fifteen genomic islands and CRISPR-Cas elements were identified in its genome.

Background: During intense exercise, anaerobic metabolism predominantly produces energy in the body, resulting in lactic acid (LA) accumulation, which contributes to muscle fatigue and soreness and may also impair neurological and cardiovascular functions. In endurance sports, the lactate threshold (LT) is a key indicator of an athlete's capacity to clear and utilize LA, directly influencing athletic performance and endurance. Therefore, LA detection is crucial for assessing the physical condition of both athletes and the general population, as well as for optimizing training programs.

Diabetic kidney disease (DKD), a prominent microvascular complication of diabetes mellitus and the leading cause of end-stage renal disease (ESRD), was addressed through a novel nanotherapeutic approach. This study engineered folic acid-conjugated poly(lactic-co-glycolic acid) nanoparticles (FA-PLGA NPs) for the folate receptor (FR)-targeted delivery of Toll-like receptor 4 small interfering RNA (TLR4 siRNA) to treat diabetic nephropathy (DN). In a streptozotocin-induced DN murine model, administration of FA-PLGA NPs/TLR4 siRNA significantly mitigated renal injury compared to untreated DN controls.

The aim of the study was to assess the effect of lyophilized cell-free supernatant (CFS) obtained from Lacticaseibacillus paracasei B1 and Lactiplantibacillus plantarum O24 cultures on the characteristics of cooked pork sausages stored by 21 days at 4 °C. The following parameters were assessed: antioxidant activity (ABTS, Reducing Power, Fe-chelating activity), texture parameters (hardness, springiness, gumminess, chewiness) and color changes (L*,a*,b*), as well as the fatty acid profile and TBARS content as an indicator of lipid oxidation. Microbiological status was also assessed.

Poly(L-lactic acid) (PLLA), as a substrate material, has been widely utilized in the field of biodegradable vascular stents.
