Article Abstract

Numerous bio-organisms employ template-assisted crystallization of molecular solids to yield crystal morphologies with unique optical properties that are difficult to reproduce synthetically. Here, a facile procedure is presented to deposit bio-inspired birefringent crystals of xanthine derivatives on a template of single-crystal quartz. Crystalline sheets that are several millimeters in length, several hundred micrometers in width, and 300-600 nm thick, are obtained. The crystal sheets are characterized with a well-defined orientation both in and out of the substrate plane, giving rise to high optical anisotropy in the plane parallel to the quartz surface, with a refractive index difference Δn ≈ 0.25 and a refractive index along the slow axis of n ≈ 1.7. It is further shown that patterning of the crystalline stripes with a tailored periodic grating leads to a thin organic polarization-dependent diffractive meta-surface, opening the door to the fabrication of various optical devices from a platform of small-molecule based organic dielectric crystals.

The growing interest in prebiotic ingredients has led to the valorization of agri-food by-products, such as coffee silverskin, known for its richness in dietary fiber and health-promoting compounds. This study evaluated the impact of in vitro simulation of gastrointestinal digestion on the chemical composition (carbohydrates, caffeine, and chlorogenic acids) and prebiotic potential (probiotic growth, organic acid production, pH, and antioxidant activity) of milled coffee silverskin. The results show stability of polysaccharides during digestion, while caffeine and 5-caffeoylquinic acid were partially released into the bioaccessible fraction.

Enhancing renal urate excretion is clinically relevant to achieve serum urate-lowering, and the functional inhibition of urate transporter 1 (URAT1), a renal urate transporter involved in the reabsorption of urate, has been recognized as a promising strategy. Oxidative stress from excessive accumulation of ROS drives several diseases, highlighting the need for efficient antioxidants. The antioxidant activity of excited-state genistein (Gen) and its methylated derivatives (5-MG, 4'-MG, and 7-MG) is systematically explored using density functional theory/time-dependent density functional theory (DFT/TD-DFT) calculations, molecular docking, and molecular dynamics simulation. Except for 5-MG, the rest of the isoflavones have excited state intramolecular proton transfer (ESIPT) property confirmed by potential energy curves as an ultrafast process, which further determines the molecular forms, namely enol (S) and keto* (S) forms.
