Article Abstract

The aim of this study was to develop a white bread with improved nutrient contents and reduced levels of potentially harmful Maillard reaction products such as N(ε)-carboxymethyllysine (CML) and 5-hydroxymethylfurfural (HMF). Assays were carried out through a full factorial experimental design allowing the simultaneous analysis of four factors at two levels: (1) wheat flour extraction rates (ash content: 0.60%-0.72%), (2) leavening agents (bakers' yeast - bakers' yeast and sourdough), (3) prebaking and (4) baking conditions (different sets of time and temperature). The baking conditions affected HMF and CML as well as certain mineral contents. A reduced baking temperature along with a prolonged heat treatment was found to be favourable for reducing both the CML (up to 20%) and HMF concentrations (up to 96%). The presence of sourdough decreased the formation of CML (up to 28%), and increased the apparent amounts of calcium (up to 8%) and manganese (up to 17.5%) probably through acidification of the dough. The extraction rate of flours as well as interactions between multiple factors also affected certain mineral content. However, compounds like folate, thiamine, copper, zinc, iron and phytic acid were not affected by any of the factors studied.

This study developed medium-chain fatty acid (MCFA)-enriched specialty fats for hand-grasp pancakes through enzymatic interesterification (EIE) using a soybean oil/fully hydrogenated coconut oil/fully hydrogenated palm oil blend (6:1:3 w/w/w) as the substrate. Orthogonal optimization achieved 99.85 % randomization efficiency under mild conditions (70 °C, 12 % lipase load, 4 h).

The present study aimed to determine the effects of potato cultivars, processing methods, and processing conditions on acrylamide formation in fresh-cut potato chips. Tubers of five potato cultivars (Daxiyang, Shiyan1, V7, Youjin885, Zao35) were processed into potato chips using five methods (pan-cooking, deep-frying, oven-baking, microwaving, and air-frying). Among the five cultivars, tubers of potato Youjin885 were identified as the most suitable cultivar for producing potato chips with the lowest acrylamide and its precursor contents.

Deoxynivalenol (DON), B-type fumonisins (FBs), and deoxynivalenol-3-β-d-glucoside (DON-3-Glu) are mycotoxins synthesized by species that infect wheat and maize. Mycotoxins pose a food safety problem due to their toxicity. Prediction of food allergy reaction severity remains a challenging clinical dilemma, with no single biomarker or patient factor serving as a definitive predictor. Clinically, being able to accurately estimate future reaction severity would be a key advancement in terms of risk-stratifying patients who might most benefit from specific immunotherapy, anti-IgE therapy, or at minimum, ensuring this population always has autoinjectable epinephrine. This mini-review explores advancements in two key domains: biomarkers and host factors.
