The association of pea proteins (PP) with a more consumer-accepted product, such as milk, is considered as a strategy to improve plant protein consumption. This study investigates the physicochemical and rheological properties of mixed milk protein (MP): PP systems at different protein ratios (100:0, 80:20, 60:40, 40:60, 20:80, 0:100, MP:PP) in high-concentrated protein systems, before and after thermal treatment. The results showed that MP, represented by casein, and PP form independent networks with rheological behavior dependent on the major protein fraction involved in the mixture.

For the first time, a method for the simultaneous analysis of fifteen polycyclic aromatic hydrocarbons (PAHs), including light and heavy PAHs, in açaí-based food products (AFPs) was developed using vacuum-assisted sorbent extraction (VASE) combined with gas chromatography-mass spectrometry (GC-MS). The method requires no organic solvents and is amenable to full automation. To achieve optimal analytical extraction conditions, VASE parameters including stirring rate, extraction time, desorption temperature, desorption time, preheat time, and preheat temperature were optimized using sequential multivariate optimization.

In this study, polymeric ionic liquids featuring different functional moieties were applied as sorbent coatings in direct-immersion solid-phase microextraction (DI-SPME) for the extraction of 2-methylimidazole (2-MI) and 4-methylimidazole (4-MI) from açaí-based food products followed by gas chromatography-mass spectrometry (GC-MS) analysis. This study aimed to investigate the suitability of the application of high-intensity ultrasounds (HIUS) to improve the acid induced gelation of mixed protein systems formed by casein micelles (CMs) and pea. The protein suspensions were prepared in different protein ratios CMs: pea (100:0, 80:20, 50:50, 20:80, 0:100) at 8% (w/w) total protein concentration. In the suspensions, the ultrasound treatment produced an increase in solubility, surface hydrophobicity, and a decrease in the samples' viscosity, with more remarkable differences in protein blends in which pea protein was the major component.

The aim of this study was to evaluate the electrocardiographic responses of Colossoma macropomum exposed to short-term baths using the essential oil of Piper divaricatum (EOPD) as an anaesthetic-like agent in different doses (40, 60, and 80 μL L). Cardiac responses throughout and after exposure to EOPD were monitored and evaluated through mean heart rate (HR), duration and amplitude of the QRS complex (ventricular depolarization), and Q-T (ventricular contraction) and R-R (time between two successive QRS complexes) wave intervals. Across all doses, there was a marked depression of the HR, mainly at 80 μL L EOPD.
