Multi-scale structure change and sugar derivatives of lotus seed cross-linked starch during dynamic simulated digestion in vitro.

Article Abstract

The anti-digestive properties of cross-linked starches are essential for the development of low glycemic foods. Dynamic digestion modeling simulates the human digestive process more accurately and is an effective tool to study its anti-enzymatic mechanism. The structural evolution characteristics and the generation rules of sugar derivatives of lotus seed cross-linked starch with low, medium, high cross-linking degree (LS-2CS, LS-6CS, LS-12CS, respectively) were studied and compared during in vitro dynamic simulation digestive system. Studies of sugar derivatives found that LS-12CS showed an antidigestive advantage in simulating late gastrointestinal digestion. Similarly, there was no significant difference in the long-range and short-range ordered structures of LS-12CS after 60 min of simulated gastric digestion and 120 mins of simulated continuous gastrointestinal digestion. The spatial resistance it generates resisted the digestive enzymes' digestion of the long-branched chains, increased the average polymerization degree of branched starch, stabilized the amylose content, and promoted long-range ordered structure ordering and stabilization. This contributed to a better percentage of distarch monophosphate that effectively resisted starch digestion and better resistance to enzymatic degradation in dynamic digestion with LS-12CS. This work contributes to understanding the structure-digestive property relationship of LSCS and promotes its food application.

Background: Previous studies involving cleanup via conventional solid-phase extraction (SPE) materials to overcome matrix effects for the polar organophosphonate and -phosphinate pesticides glyphosate, glufosinate, ethephon, fosetyl, and their various metabolites often showed limitations due to the existence of various matrix compounds in plant commodities with similar polarity. To overcome existing drawbacks, we utilized the unique selectivity provided by metal oxides as SPE materials. Platinum-group metal half-sandwich complexes are considered to be potential replacements of the clinically widely used platins which have several side effects and tend to cause resistance to develop. In our previous works, we used a range of 2-pyridyl-substituted N- and C-glycosyl heterocycles as N,N-chelating ligands to prepare ruthenium(II), osmium(II), iridium(III) and rhodium(III) polyhapto arene/arenyl half-sandwich complexes. Some of these complexes, particularly with the C-glucopyranosyl isoxazole derived ligand in its O-perbenzoylated form, exhibited greater anticancer efficiency than cisplatin and had minimal or negligible effects on non-transformed fibroblasts.
