Article Abstract

This study aimed to assess how sex and age influence the physicochemical and technological properties of the longissimus thoracis et lumborum muscle in Botucatu rabbits. Ten samples were used from each experimental group (females and males 3 and 12 months old). Color (, , and ), pH, water-holding capacity, cooking weight loss, shear force, percentage of collagen (soluble, insoluble, and total), myofibrillar fragmentation index, sarcomere length, cholesterol concentrations, lipid oxidation, and chemical composition were evaluated. Sex influenced ( < 0.05) the chemical composition of the meat; young females presented meat with a higher concentration of lipids and cholesterol than males of the same age; however, the opposite results were obtained with the meat of 12-month-old rabbits. Age also influenced the meat's characteristics: older rabbits had meat with more intense red and yellow colors and longer sarcomere length. In terms of chemical composition, 12-month-old rabbits had higher protein and lower soluble collagen and mineral matter compared to younger rabbits. Overall, age impacted the physicochemical properties, with older rabbits exhibiting more opaque, reddish meat, higher insoluble collagen, and lower moisture content. In addition, the influence of sex, especially on the chemical composition of meat in rabbits, must be emphasized.

Despite great advances in decarbonylation of aldehydes using noble metals, the reaction is largely limited to high reaction temperatures and displays poor functional group tolerance. Herein, we report photo-irradiated decarbonylation of aldehydes, promoted by -W(N)(dppe), at room temperature. A wide range of substrates with diverse functional groups underwent decarbonylation efficiently to give the corresponding arene and alkane products in moderate to high yields.

Solid-state polycyclotrimerization of diynes to porous organic polymers.

Herein, we report a solid-state polycyclotrimerization of 1,4-diethynylbenzene using mechanochemical activation in a ball mill, yielding a highly porous and hydrophobic hyperbranched polymer (HBP) with a specific surface area of up to 570 m g. The reaction, catalyzed by Fe(hmds) and conducted under solvent-free conditions, was optimized by varying milling time and frequency. This method enables the efficient synthesis of insoluble, porous organic polymers with high yields (up to 95%) and offers an environmentally friendly alternative to traditional solution-based polymerizations.

Ionic liquids (ILs) are a class of organic salts with melting points below 100°C. Owing to their unique chemical and physical properties, they are used as solvents and catalysts in various chemical transformations, progressively replacing common volatile organic solvents (VOCs) in green synthetic applications. However, their intrinsic ionic nature can restrict the use of mass spectrometric techniques to monitor the time progress of a reaction occurring in an IL medium, thus preventing one from following the formation of the reaction products or intercepting the reaction intermediates.
