Article Abstract

metabolism of epoxy fatty acids, the unsaturated fatty acid oxidation products formed upon heating of edible oils, remains unclear. Here, we compared the catabolic rates and accumulation of dietary and epoxy octadecanoic acids (epoxy-C18:0) with those of oleic acid (C18:1) in mice using stable isotope-labeled compounds. Both epoxy isomers were catabolized more rapidly than C18:1, with epoxy-C18:0 exhibiting a slightly faster rate than epoxy-C18:0. The concentrations of and epoxy-C18:0 were significantly lower than those of C18:1 in the plasma, small intestine, and liver, with epoxy-C18:0 accumulation being lower than epoxy-C18:0 accumulation. These results indicate that epoxy-C18:0 isomers are preferentially catabolized and accumulate less in the body than C18:1. The structural differences between and epoxy-C18:0 isomers may influence their metabolic fate. This is the first comprehensive elucidation of the catabolism and body accumulation of dietary epoxy fatty acids, providing insights for food safety assessment.

Objective: to compare the effect of salt consumption on blood pressure (BP) of an indigenous and of a non-indigenous population in Brazil.

Design: the studies were carried out in the years of 1999-2004 in an urban population of Vitória (n = 1,663), the capital of Espírito Santo State, and in an indigenous population settled in a reserve of Aracruz (n = 663). Salt consumption was evaluated by a 12-hour overnight urine collect.
