Article Abstract

We investigated whether samples of the neck skin from 24 broiler chickens, which were taken from broiler carcasses after chilling, are representative for the microbiological load (TVC - total viable count 3.99 log cfu/g, E. coli 2.06 log cfu/g, Campylobacter spp. 2.04 log cfu/g) of the entire skin. No significant difference was found between the contamination of the neck skin and the other skin areas analysed (back, breast, abdominal and leg skin) for any of the target germs. We also compared results from two sampling methods (neck skin excision and whole carcass rinse) to check whether both methods yield comparable results. Significantly higher mean values were found for the TVC in the whole carcass rinse samples (4.61 log cfu/ml vs. 4.28 log cfu/g), while we found no significant difference between both sampling methods for E. coli. For Campylobacter spp. the neck skin samples showed significantly higher mean values than the whole carcass rinse samples (2.04 log cfu/g vs. 1.31 log cfu/ml).

This study investigated the effects of electron beam irradiation (0-8 kGy) on the physicochemical and protein properties of scallop adductor muscles under refrigerated storage. Irradiation significantly decreased moisture content, microbial counts, and total sulfhydryl content immediately after treatment (day 0), while increasing carbonyl content, surface hydrophobicity, and thiobarbituric acid reactive substances (TBARS) (P < 0.05).

Salting is a traditional fish preservation method that reduces moisture content, enhances shelf life, and improves sensory attributes. In Lake Tana, inconsistent salt application by fishers affects preservation effectiveness, highlighting the need to determine optimal salt concentrations for improved fish quality. The objective of this study was to assess how varying salt concentrations influence the proximate composition, microbial counts, and sensory characteristics of spp.

(brine shrimp) is a vital live feed in aquaculture, providing essential nutrients during the early developmental stages of aquatic species. This study aimed to evaluate the efficacy of synbiotic-enriched as a live feed for hybrid catfish larvae ( × ), using locally isolated probiotics ( and ) and the commercial prebiotic inulin. The study was conducted in two phases.

Fuchka, a popular street food across Bangladesh and the Indian subcontinent, poses potential public health risk due to substandard hygienic practice during preparation and handling. This study evaluated the microbiological quality of and its associated components and identified food-borne bacteria with their antibiogram profiles within a One Health framework. 60 samples including fuchka, salad, hand wash, and dish wash water were collected from street vendors, shop, and restaurants within the Mymensingh City Corporation area (4 samples × 15 sites).

The extreme hydrophobicity of nocathiacin, a potent thiopeptide antibiotic against multidrug-resistant (MDR) Gram-positive pathogens, has limited its clinical development. This study formulated an injectable lyophilized nocathiacin with enhanced solubility (12.59 mg/mL).
