Many previous studies have reported various phospholipids and elements that affect sake production; however, it seems to be challenging to investigate individual types in each rice variety due to their high diversity, not to mention their distribution patterns. Since its introduction, mass spectrometry imaging (MSI) has gained attention in various fields as a simple compound visualization technique. The current study highlights the progress of powerful MSI in comprehensively analyzing phospholipids and minerals in brown rice for sake production. Multivariate analysis suggested phospholipids relating to each rice group based on regions of interest. Phospholipid classes connected with embryo and endosperm included fatty acylcarnitine, diacylglycerol, phosphatidylcholine, phosphatidylglycerol, and phosphatidylethanolamine. Meanwhile, the studied rice groups showed the same distribution of the investigated 12 minerals. This is the first study that reports a comprehensive imaging analysis of phospholipids and elements in brown rice for several cultivars for sake production.

Analytical sensory testing and taste sensor analysis demonstrated significantly higher sweetness scores in the SL-fed group. Liquid chromatography-mass spectrometry (LC-MS) identified increased levels of amino acids, nucleotides, and glucose 1-phosphate, compounds associated with sweetness and umami perception.

This study aims to evaluate the success of artificial intelligence models developed using convolutional neural network-based algorithms on CBCT images. Labeling was done by segmentation method for 15 different conditions including caries, restorative filling material, root-canal filling material, dental implant, implant supported crown, crown, pontic, impacted tooth, supernumerary tooth, residual root, osteosclerotic area, periapical lesion, radiolucent jaw lesion, radiopaque jaw lesion, and mixed appearing jaw lesion on the data set consisting of 300 CBCT images. In model development, the Mask R-CNN architecture and ResNet 101 model were used as a transfer learning method.

Sake yeast strain K1801 with high productivity of ethyl caproate is widely used for high-quality sake brewing; however, K1801 has a defect in the spindle assembly checkpoint, which is responsible for the mutation R48P of the PP2A regulatory subunit Cdc55. Here, we successfully isolated spontaneous revertants of the cdc55 mutation with the excellent brewing property similar to K1801 and normal checkpoint integrity.
