Traditionally, oxygen supplementation has been more strongly associated with yeast vitality and sugar consumption kinetics than with aroma metabolism. This study investigated the effects of oxygen exposure during the exponential growth phase of yeast cells on the polyfunctional thiol profile of wine. Using quantitative real-time RT-PCR, the expression of five genes related to amino acid and peptide uptake, as well as two genes associated with β-lyase activity, was analyzed.

Several metallic elements pose a significant threat to health, as they are causally linked to numerous diseases. Within the EPIMETAL project, we conducted a cross-sectional investigation in Tuscany, Italy, aiming at quantifying urinary levels of selected metals among 300 older individuals from the EPIC-Florence cohort and identifying associated individual-level characteristics. Urinary metals levels were also compared with those of two surveys previously conducted in areas of Tuscany with known environmental contamination.

Background: Raising retail prices on alcoholic beverages preferred by high-risk groups (males, those of low socioeconomic status, and those with heavy alcohol use) might selectively reduce their alcohol consumption. However, the differential impact of beverage-specific price increases on US population groups has yet to be studied. This study aimed to simulate the effect of beverage-specific price increases on alcohol use within subgroups of the adult US population defined by sex, educational attainment, and alcohol use category.

Unlabelled: Muscadine grapes, which are valued for their fresh consumption, boutique wine production with distinctive flavors and aromas, and disease resistance, provide a unique ecological niche for investigating endophytic yeast communities. Despite their potential, the cultivable diversity and functional capabilities of these yeasts remain largely underexplored. In this study, we investigated culturable endophytic yeasts from the unskinned berries of diverse muscadine and bunch grape cultivars.

Alcohol consumption is an important health-related risk factor. A 10% reduction in pure alcohol consumption in liters per capita (APC) is one of the targets of the Sustainable Development Goals (SDGs). This indicator was developed using national data and published in a governmental panel (APC-Brazil).
