The primary aim of this study was to evaluate factors associated with changes in food-preparation practices during the Coronavirus Disease 2019 (COVID-19) pandemic in Japan and its associations to food-group intake. To examine this, a cross-sectional online survey was conducted in July 2020. Participants were 2285 adults aged 20-69 years who resided in any of 13 prefectures in Japan where specific COVID-19 regulations had been implemented. Self-reported changes in food-preparation practices when compared to the pre-COVID-19 pandemic period were measured as "increased" (24.6%), "decreased" (7.3%), and "no change" (68.1%), respectively. Stepwise logistic regression analyses indicated that participants who increased the time and effort for food preparation were younger in age, partially working remotely, experiencing reduced household income due to COVID-19, but highly concerned the importance of diet. On the other hand, participants whose household income decreased, and household economic status worsened, as well as those whose importance of diet deteriorated due to COVID-19 were more likely to decrease time and effort for cooking. Although the increased group were more likely to prepare meals with raw ingredients, the decreased group showed higher frequency of using takeout. These results indicated major determinants of changes in time spending on food preparation in consequence of COVID-19, and highlighted essential targets for future nutrition education.

Egg yolk immunoglobulin (IgY) has emerged as a promising alternative to monoclonal antibodies (mAbs) due to its facile extraction, higher yield, and greater tolerance to organic solvents. This work developed a selective IgY antibody against bongkrekic acid (BA) and isobongkrekic acid (IsoBA), the lethal toxins produced by Burkholderia gladioli pv. Cocovenenans (BGC), which led to severe food poisoning incidents and resulted in casualties.

In this study, aloe emodin and β-d-glucose pentaacetate were added into potato starch/polyvinyl alcohol for the construction of colorimetric/fluorescent dual-pass intelligent response labels. Inspired by the lotus leaf structure, retained the advantages of the label itself and solved the hydrophilic problem of the label, and further developed a multi-functional dual-channel smart label with hydrophobicity and self-adhesion. The water contact angle of the prepared T-AEB label was 120.

Fish gelatin (FG) is a biopolymer with favorable biocompatibility, mechanical strength, and water retention, making it ideal for films, hydrogels, and bio-based applications. This study aimed to comparatively investigate the FG based intelligent films and hydrogels for monitoring shrimp freshness. Intelligent films and hydrogels were prepared using FG as a macromolecular matrix, incorporating ferulic acid (FA)-crosslinked anthocyanin (ACN) as an indicator, and enhanced with polysaccharides (κ-carrageenan (κC), xanthan glucomannan (XG), and konjac glucomannan (KGM)).

Wendan Decoction (WDD), a classic formula for the expectoration of phlegm, has been acknowledged for the management of chronic obstructive pulmonary disease (COPD). Nevertheless, the therapeutic components and mechanism of WDD in COPD remain elusive. Hence, an analytical strategy for extensive investigation of the constituents in WDD combining UFLC-ESI-Q/TOF-MS and subsequent network pharmacology was conducted, and the appropriate preparation of bio-samples was involved with mechanistic bioanalysis including multi-technique metabolomics and molecular biological means, that pivotal factors such as PTGS2, arachidonic acid (AA) metabolism, and PI3K-AKT signaling pathway were recommended as potential central elements for the anti-COPD effects.

Dimethyl phthalate (DMP) is widely used as a plasticizer in the plastics industry, posing a serious threat to environmental pollution and public health. In this work, CuFeO@AC was used as a coating to prepare a novel solid-phase microextraction (SPME) fiber. CuFeO@AC fiber exhibits a larger specific surface area and more active sites, significantly enhancing DMP enrichment efficiency.
