The interest in dietary polyphenols in recent years has greatly increased due to their antioxidant bioactivity with preventive properties against chronic diseases. Polyphenols, by modulating different cellular functions, play an important role in neuroprotection and are able to neutralize the effects of oxidative stress, inflammation, and apoptosis. Interestingly, all these mechanisms are involved in neurodegeneration. Although polyphenols display differences in their effectiveness due to interindividual variability, recent studies indicated that bioactive polyphenols in food and beverages promote health and prevent age-related cognitive decline. Polyphenols have a poor bioavailability and their digestion by gut microbiota produces active metabolites. In fact, dietary bioactive polyphenols need to be modified by microbiota present in the intestine before being absorbed, and to exert health preventive effects by interacting with cellular signalling pathways. This literature review includes an evaluation of the literature in English up to December 2019 in PubMed and Web of Science databases. A total of 307 studies, consisting of research reports, review articles and articles were examined and 146 were included. The review highlights the role of bioactive polyphenols in neurodegeneration, with a particular emphasis on the cellular and molecular mechanisms that are modulated by polyphenols involved in protection from oxidative stress and apoptosis prevention.

The objectives of this research were to evaluate (1) the storage stability and (2) the consumption effect on biomarkers of oxidative stress of an antioxidant tea prepared from purple corn cob and stevia (AOxTea). The AOxTea bags were subjected to storage environments of 75 or 85 % of relative humidity at 30, 40 and 50 °C for up to 19 days.

Chronic liver disease (CLD) is a leading cause of global morbidity and mortality, necessitating effective preventive strategies. Growing evidence is linking coffee consumption with reduced risk of disease progression in various CLDs, including metabolic dysfunction associated steatotic liver disease (MASLD), alcoholic liver disease, hepatitis B and C, autoimmune hepatitis, and a reduction in the risk of hepatocellular carcinoma development. Coffee, a globally consumed beverage, contains bioactive compounds like caffeine, chlorogenic acids, diterpenes, and polyphenols, which may offer hepatoprotective benefits through anti-inflammatory, antioxidant, and metabolic regulatory effects.

An innovative 4D targeted method was developed for the determination of 61 bioactive compounds in royal jelly (RJ) related to their health-promoting properties. The method, apart from high-resolution mass spectrometry, exploits the advantages of vacuum-insulated probe-heated electrospray ionization source (VIP-HESI), reducing thermal degradation, and trapped ion mobility spectrometry (TIMS), improving selectivity and compound identification. The optimization of VIP-HESI ionization parameters using experimental designs showed that the critical parameters were the capillary voltage as well as the probe gas flow rate and temperature.
