In this work, the volatile profiles of smoked and non-smoked Iranian rice were identified, and their relative abundance was calculated and compared. Headspace solid-phase microextraction together with gas chromatography-mass spectrometry (SPME-GC-MS) were used to extract and identify the volatile compounds. The main groups of volatiles in Iranian rice were aldehydes, ketones, phenol derivatives, furans, linear hydrocarbons, esters and terpenes. The chemical family aldehydes was the most abundant one in the profile of non-smoked rice, while phenol derivatives and furans predominated in smoked samples. This study is the first one reporting comparative data of volatile compounds between smoked and non-smoked Iranian rice.

This research focuses on the measurement of the modulus of elasticity as a key elasto-mechanical property for three Iranian rice varieties-Tarom Hashemi, Anbarbu, and Dom Siah-using macroscopic compression tests and Atomic Force Microscopy (AFM) at the microscopic scale. Rice cultivation is a highly criticized sector of agriculture in Iran. Despite the intensifying drought conditions, Central Iranian farmers continue to prioritize rice cultivation due to its substantial economic benefits, affecting the structure and configuration of irrigated agricultural landscapes. In a river catchment, we mapped rice fields over a 10-year period (2014-2023) using Landsat-8 OLI images, with mapping accuracy metrics showing kappa coefficients above 81.
