We devised a single-batch fermentation system to simulate human colonic microbiota from fecal samples, enabling the complex mixture of microorganisms to achieve densities of up to 1011 cells/mL in 24 h. 16S rRNA gene sequence analysis of bacteria grown in the system revealed that representatives of the major phyla, including Bacteroidetes, Firmicutes, and Actinobacteria, as well as overall species diversity, were consistent with those of the original feces. On the earlier stages of fermentation (up to 9 h), trace mixtures of acetate, lactate, and succinate were detectable; on the later stages (after 24 h), larger amounts of acetate accumulated along with some of propionate and butyrate. These patterns were similar to those observed in the original feces. Thus, this system could serve as a simple model to simulate the diversity as well as the metabolism of human colonic microbiota. Supplementation of the system with several prebiotic oligosaccharides (including fructo-, galacto-, isomalto-, and xylo-oligosaccharides; lactulose; and lactosucrose) resulted in an increased population in genus Bifidobacterium, concomitant with significant increases in acetate production. The results suggested that this fermentation system may be useful for in vitro, pre-clinical evaluation of the effects of prebiotics prior to testing in humans.

The development of innovative bioprocessing technologies has resulted from the growing global need for sustainable forms of energy and environmentally friendly waste treatment. In this review, we focus on the combined electro-fermentation and microbial fuel cells, as they form a hybrid system that simultaneously addresses wastewater treatment, bioenergy production, and bioplastics. Even though microbial fuel cells produce electricity out of the organic waste by the use of electroactive microorganisms, electro-fermentation improves the microbial pathways through the external electrochemical management.

Methane (CH), carbon dioxide (CO), and oxygen (O) are the major gases produced by dairy cattle as a result of rumen fermentation and metabolism, and thus, their concentrations are frequently measured as a way of estimating heat production and energy metabolism. A well-utilized method of measuring gas consumption and production to estimate heat production is indirect calorimetry, which requires bags to retain the sampled gases until analysis. Waterlogging, increasingly intensified by climate change, limits oxygen availability in the root zone, disrupting carbon and sugar metabolism, leading to energy deficits and oxidative stress that ultimately impair plant growth and productivity. Melatonin, a versatile signaling molecule, mitigates waterlogging-induced stress by enhancing anaerobic respiration and fermentation under oxygen-deprived conditions, upregulating stress-responsive genes, and restoring energy balance through optimized sugar metabolism. It also reduces oxidative damage by strengthening the antioxidant defense system and further improves stress tolerance by modulating phytohormone signaling and influencing rhizosphere microbiome dynamics.

This study investigates the impact of a defined starter culture on the fermentation of cocoa beans and its influence on the production of volatile and non-volatile compounds related to sensory quality. A microbial consortium comprising Saccharomyces cerevisiae, Pichia kudriavzevii, Levilactobacillus brevis, and Acetobacter okinawensis was selected based on their enzymatic activity and acid regulation properties. Fermentation trials showed that the starter culture enhanced the synthesis of key volatile compounds, particularly esters and higher alcohols, such as 2-phenylethanol and 2-phenylethyl acetate, which contribute floral and fruity aromas.
