Application of selected starter cultures in cocoa fermentation: effects on sensory-related volatile and non-volatile organic compounds.

This study investigates the impact of a defined starter culture on the fermentation of cocoa beans and its influence on the production of volatile and non-volatile compounds related to sensory quality. A microbial consortium comprising Saccharomyces cerevisiae, Pichia kudriavzevii, Levilactobacillus brevis, and Acetobacter okinawensis was selected based on their enzymatic activity and acid regulation properties. Fermentation trials showed that the starter culture enhanced the synthesis of key volatile compounds, particularly esters and higher alcohols, such as 2-phenylethanol and 2-phenylethyl acetate, which contribute floral and fruity aromas.

Do Ethics and Values Play a Role in Virtual Education? A Study on the Perception of Students and Teachers.

Unlabelled: Learning in virtual environments is an ethical experience. This research aimed to understand the ethical experience of a virtual learning environment from the perspective of university students and their teachers. The participants were 205 higher education students from different Spanish-speaking countries (Colombia, Argentina, Mexico, Ecuador, and Spain) and 30 teachers who acted as tutors in virtual education.

Sedentarism, A Modifiable Risk Factor for Developing Chronic Kidney Disease in Healthy People.

Background: Chronic kidney disease (CKD) is a consequence of the interaction of many pathophysiological processes, manifested by a decrease in the glomerular filtration rate (GFR) and abnormal kidney function. Sedentary behavior is associated with decreased kidney function, and regular physical activity could have the potential to reduce the risk of developing CKD, although this is not entirely clear. The objective of this study was to investigate the relationship between sedentary behavior and the development of CKD.

Seroprevalence of the SARS-CoV-2 antibody in healthcare workers: a multicentre cross-sectional study in 10 Colombian cities.

Background: Healthcare workers are at increased risk of infection due to occupational exposure to SARS-CoV-2-infected patients. The objective of this study was to determine the seroprevalence of SARS-CoV-2 in healthcare workers in Colombia.

Methods: This study is a cross-sectional study focused on estimating the seroprevalence of SARS-CoV-2 antibodies in healthcare workers from 65 hospitals in 10 cities in Colombia during the second semester of 2020.

Perception channels and cognitive styles: opponents, followers or learning allies?

This article presents the findings in the process of evaluating the relationship between perception channels and cognitive styles, from the analysis of conceptions over time and their involvement. Establishing through an experiment, and applying two didactic strategies, the associations with learning. Channels are characterized with VAK, Styles with CHAEA, and Performance with a pre-test/post-test design.
