This study investigates the impact of a defined starter culture on the fermentation of cocoa beans and its influence on the production of volatile and non-volatile compounds related to sensory quality. A microbial consortium comprising Saccharomyces cerevisiae, Pichia kudriavzevii, Levilactobacillus brevis, and Acetobacter okinawensis was selected based on their enzymatic activity and acid regulation properties. Fermentation trials showed that the starter culture enhanced the synthesis of key volatile compounds, particularly esters and higher alcohols, such as 2-phenylethanol and 2-phenylethyl acetate, which contribute floral and fruity aromas.

Background: Chronic kidney disease (CKD) is a consequence of the interaction of many pathophysiological processes, manifested by a decrease in the glomerular filtration rate (GFR) and abnormal kidney function. Sedentary behavior is associated with decreased kidney function, and regular physical activity could have the potential to reduce the risk of developing CKD, although this is not entirely clear. The objective of this study was to investigate the relationship between sedentary behavior and the development of CKD.

This article presents the findings in the process of evaluating the relationship between perception channels and cognitive styles, from the analysis of conceptions over time and their involvement. Establishing through an experiment, and applying two didactic strategies, the associations with learning.
