Background: Aflatoxins are mycotoxins produced by Aspergillus fungi in crops intended for food and feed. Acute exposure to high levels of aflatoxin B1, one of the most toxic mycotoxins, can result in severe poisoning, defined as acute aflatoxicosis, which manifests as acute hepatic failure followed by death in severe cases. Currently global burden estimates of acute aflatoxicosis are lacking - in contrast to burden estimates of chronic exposure - making it difficult to implement and prioritize risk management strategies in the prevention and control of aflatoxin exposure.

Scarcity of feed ingredients, unregulated feed mills, and limited monitoring of mycotoxin levels in feed increase the risk of mycotoxin exposure for poultry in sub-Saharan Africa. This study examined mycotoxins in feed from 122 Kenyan broiler farms and an association between on-farm feed handling practices and mycotoxin levels. Using a validated multi-mycotoxin liquid chromatography-tandem mass spectrometry method (LC-MS/MS), all feed samples contained at least one mycotoxin and 93 % (n=113) had >3 mycotoxins.

While reducing the consumption of animal-source foods is recommended for planetary and human health, potential emerging food safety risks associated with the transition to dietary patterns featuring plant-based meat (PBMA) and dairy alternatives (PBDA) remain unexplored. An eco-friendly and efficient one-step approach for the synthesis of carbon quantum dots (CDs) that encapsulated molecularly imprinted fluorescence quenching particles (MIFQP) and their application for the determination of zearalenone (ZEA) in a cereal sample are described in this study. CDs with high luminescence were first synthesized, and then encapsulated in the silica-based matrix through a non-hydrolytic sol-gel process. The resulting ZEA-imprinted particles exhibited not only an excellent specific molecular recognition of ZEA, but also good photostability and obvious template binding-induced fluorescence quenching.
